- salt and pepper, to taste

In a heavy skillet, heat ghee or olive oil over medium heat until it shimmers. This indicates the pan is ready for searing.

Carefully add the chicken breasts to the hot skillet in a single layer. Brown the chicken for 3-4 minutes per side to achieve a beautiful sear and golden crust. Remember, we are only browning the chicken at this stage, not cooking it through completely. If cooking more chicken, do this in batches to avoid overcrowding the pan, which can lead to steaming instead of searing.
