  • WÜSTHOF Gourmet 7″ Hollow Edge Santoku Knife
  • Hiware Extra Large Bamboo Cutting Board for Kitchen, Heavy Duty Wood Cutting Boards with Juice Groove, 100% Organic Bamboo, Pre Oiled, 18″ x 12″
  • Crock-Pot 7 Quart Oval Manual Slow Cooker, Stainless Steel (SCV700-S-BR)

Ingredients

  • 2 eggplant, sliced into long thin noodles with a mandoline
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 cup cottage cheese
  • 8 oz mozzarella cheese, with 1 oz set aside
  • 12 oz pasta sauce

Instructions

  1. In a slow cooker dish, lay eggplant noodles down flat.
  2. Layer a little sauce, peppers and onions, cottage cheese and mozzarella.
  3. Repeat to make 3 layers with sauce, veggies, cottage cheese and mozzarella.
  4. Add a final fourth layer of eggplant, top with sauce.
  5. Cover and cook on high 2 1/2 hours, or until eggplant is softened.
  6. Add 1 oz of cheese that was set aside to top, cover.
  7. Let cook additional 10 minutes, until cheese is melted.
  8. Garnish with red pepper flakes and parsley if desired.
  9. Serve hot – makes fabulous leftovers.
