  • 5-6 Roma or vine tomatoes, sliced (approximately 1.5 – 2 pounds)

  • 1 9-inch pre-made pie crust (or homemade, chilled)
  • ¼ – ⅓ cup fresh basil, chopped
  • ½ red onion, finely diced (divided)
  • 6 slices cooked bacon, chopped into small pieces
  • 2 cups freshly shredded sharp cheddar cheese
  • 1 cup freshly shredded mozzarella cheese
  • 1 cup full-fat mayonnaise
  • ½ cup freshly grated parmesan cheese

  • Bake for 30 to 40 minutes, or until the cheese on top of the pie has fully melted, is golden brown, and is bubbling around the edges. If the crust starts to brown too much, you can cover the edges loosely with foil.
  • Let the pie rest for at least 30 minutes before slicing and serving. This allows the filling to set properly. Garnish with additional fresh basil for garnish if desired.
