    grated Parmesan cheese

    can diced tomatoes – do not drain

Instructions

  • Preheat oven to 350 degrees Fahrenheit (175°C).
  • In a large pan, cook and crumble ground Italian sausage on medium-high heat until fully browned.
  • Once the Italian sausage is browned, remove it from the pan and set it aside. Do not drain or clean out the pan; leave the drippings for added flavor.
  • Add the diced onions to the same pan and let them soften and brown, stirring occasionally, for about 5 minutes.
  • Add the minced garlic to the pan and cook for another 3-4 minutes on medium-low heat until fragrant and lightly browned. Ensure the garlic doesn’t burn.
  • Incorporate the diced bell peppers and sliced mushrooms into the pan. Cook until they are softened and lightly browned.
  • Crucially, drain off any excess moisture from the cooked vegetables. You can press them gently to remove water, which prevents the casserole from becoming soggy.
  • Prepare a 9×9 inch casserole dish by greasing it with coconut oil cooking spray or your preferred method (e.g., butter, parchment paper).
  • Spread half of the cooked sausage crumbles evenly onto the bottom of the prepared pan.
  • Add a layer using approximately one-third each of the ricotta, Parmesan, and mozzarella cheeses over the sausage.
  • Place a layer of half of the sautéed vegetables on top of the cheese.
  • Scatter about half of the sliced pepperonis across the casserole.
  • Add a layer of diced tomatoes, including the liquid they are packed in.
  • Layer the rest of the cooked meat, followed by another one-third cheese layer, and then the remaining vegetables and tomatoes.
  • Finish the casserole with the final top layer of cheese and pepperonis, and garnish with sliced black olives.
  • Cover the casserole dish tightly with aluminum foil and bake for 20 minutes, until the casserole is hot and bubbly.
  • Remove the foil and continue to bake for another 10 minutes, or until the cheese on top is beautifully browned and bubbly.
  • Serve immediately and enjoy your delicious Cheesy Keto Pizza Casserole!

To further reduce the carbohydrate count, you have the option to eliminate the onion entirely and reduce the amount of garlic used. Additionally, you can choose to add only half a diced bell pepper instead of a whole one.

While I personally believe the flavor enhancement provided by the full quantity of these vegetables justifies the minimal extra carbs, if you are diligently tracking your macros, these adjustments can help reduce the carb count by up to 6 grams per serving.
