Ingredients

  • 1 ½ cups 8oz raw shelled pistachios
  • ¾ cup granulated sugar
  • ½ teaspoon sea salt
  • ¾ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • pinch, white pepper
  • optional:
  • ¼ teaspoon aleppo pepper
  • ¼ teaspoon smoked paprika

Instructions

  1. Preheat oven to 225 degrees F (107°C).
  2. On a baking sheet lined with parchment paper, spread out pistachios. Place in oven to heat for a few minutes.
  3. Start making candy coating – vigorously whisk together sugar, salt, cinnamon, ginger, pepper (and optional Aleppo pepper/smoked paprika) with 1/4 cup water in a medium pot, making sure there is no sugar around the sides of the pot (to prevent burning or crystallization.)
  4. Heat over medium-high, stirring until sugar dissolves and boils, continuing until it reaches 235-238 degrees F (113-114°C) on a candy thermometer.
  5. Remove candy from stove, and pistachios from oven. Carefully add the warm pistachios to the candy in the pot. Stir quickly to evenly coat all the nuts.
  6. Dump pistachios back onto the lined baking sheet, using forks or gloved hands to break apart any large clusters. Let cool completely at least an hour at room temperature.
