From spicy Cajun to herby Provençal, or even just a simple garlic-parmesan, you can easily adapt the seasonings to complement any main course or personal preference.
  • Simple & Quick: Don’t let the idea of grilling potatoes intimidate you. This recipe is designed for efficiency. With a short parboil and quick grilling time, you can have a gourmet side dish ready in under 30 minutes of active cooking.

  • Adaptable to Any Grill: Whether you have a spacious outdoor gas grill, a classic charcoal setup, a dedicated smoker, or a compact indoor electric grill, this recipe works beautifully. We’ll provide tips to ensure success regardless of your equipment.

Essential Ingredients for Perfectly Grilled Potatoes

Achieving outstanding grilled potatoes starts with selecting the right ingredients. Here’s a closer look at what you’ll need and why each component is crucial:

  • 1 lb Red, Yukon Gold, or Baby Dutch Potatoes, halved: While many potato varieties can be grilled, we highly recommend Yukon Gold or Baby Dutch potatoes. Yukon Gold potatoes are particularly excellent for grilling because their waxy-starchy texture allows them to crisp beautifully on the outside while maintaining a wonderfully light, fluffy, and rich, buttery flavor on the inside. Red potatoes also offer a good balance of firmness and flavor. These smaller, thinner-skinned potatoes require less prep and cook faster.
  • 1 tbsp Celtic Sea Salt and Fresh Cracked Pepper: The choice of salt and pepper significantly impacts the final taste. We prefer using a high-quality Celtic sea salt because its coarse crystals not only provide a delightful textural crunch but also offer a more complex, mineral-rich flavor compared to standard table salt. Freshly cracked black pepper, ground right before use, delivers the richest, most earthy flavor and a subtle warmth that enhances the potatoes’ natural sweetness. Investing in a small pepper grinder (often available at grocery stores for the same price as whole peppercorns) is highly recommended for superior flavor.
  • 4 tbsp Avocado Oil: This is our oil of choice for grilling potatoes due to its high smoke point (around 520°F / 270°C). Unlike olive oil, which can burn at the high temperatures required for crispy grilling, avocado oil remains stable, ensuring no burnt flavors. It also possesses a light, slightly vegetal flavor that beautifully complements the potatoes without overpowering them, helping to achieve that desired golden-brown crust. Olive oil is a suitable alternative if you don’t have avocado oil, but be mindful of its lower smoke point.
  • 2 tbsp Diced Garlic: Garlic is a game-changer for grilled potatoes. Its sweet, pungent, and earthy notes create a fantastic counterpoint to the starchy flavors of the potatoes. As it cooks on the grill, the garlic mellows and caramelizes slightly, releasing aromatic compounds that impart a delicious, almost buttery depth to every bite. Freshly diced garlic is always best for maximum flavor impact.
  • 1 tsp Dried Basil, 1 tsp Dried Oregano, 1 tsp Dried Thyme, 1 tsp Dried Parsley, ½ tsp Dried Sage: This combination of dried herbs forms a classic Italian seasoning profile, offering a fragrant and savory coating that pairs wonderfully with potatoes. Each herb contributes its unique character: basil for a sweet and peppery note, oregano for warmth and earthiness, thyme for a subtle minty and lemony aroma, parsley for freshness, and sage for a slightly piney, robust flavor.
  • *OR 2 tbsp Italian Herb Seasoning Blend: For ultimate convenience, a pre-mixed Italian herb seasoning blend is an excellent shortcut. Many high-quality blends combine these very herbs, ensuring a rich, balanced layer of flavor perfect for side dishes like these grilled potatoes. It’s often our preferred choice for its ease and consistent results.
  • Heavy Duty Aluminum Foil: Essential for outdoor grilling, aluminum foil prevents potatoes from sticking to the grill grates and helps them cook evenly. If you’re using an indoor grill, this may not be necessary, but for open flames, it’s a must-have for easy cleanup and preventing lost potatoes.

Step-by-Step Guide: How to Grill Potatoes

Follow these simple steps to achieve perfectly crispy and fluffy grilled potatoes every time:

A pot of boiling water with small, whole potatoes submerged, preparing for parboiling.

1. Parboil the Potatoes

Before anything else, preheat your grill to a very hot temperature, around 400 degrees Fahrenheit (200°C). While the grill heats, bring a large pot of water to a rolling boil. Thoroughly scrub your chosen potatoes to clean them, removing any dirt. Once the water is boiling, carefully add the potatoes to the pot. Let them parboil until they are just tender when pierced with a fork, typically 5-8 minutes depending on their size. It’s crucial not to overcook them at this stage, as they will finish cooking on the grill. Once tender, drain the potatoes thoroughly. If you’re planning ahead, these parboiled potatoes can be stored in the refrigerator for later grilling—a fantastic time-saver!

2. Prepare and Season

Once drained and slightly cooled, cut the parboiled potatoes into uniform 1-inch chunks. Consistency in size is key for even cooking on the grill. Transfer the chopped potatoes to a large mixing bowl. Drizzle generously with avocado (or olive) oil, ensuring each piece is lightly coated. Then, sprinkle with your desired herbs and spices—our Italian blend or individual dried herbs are perfect. Don’t forget the Celtic sea salt and fresh cracked pepper. Toss everything together thoroughly until the potatoes are evenly seasoned. For outdoor grilling, prepare a heavy-duty aluminum foil pouch to prevent sticking and loss of smaller pieces. This also helps steam them slightly for a fluffy interior while still allowing for a crispy exterior.

3. Grill to Crispy Perfection

Place the seasoned potatoes directly onto the hot grill grates (or in a foil pouch if using an outdoor grill). Grill for 5-8 minutes. During this time, the potatoes should start to develop a beautiful golden-brown color and a crispy crust on the bottom. Carefully flip the potatoes to ensure even cooking and browning on all sides. Continue grilling for another 5-8 minutes, or until all sides are wonderfully crispy, crunchy, and golden brown. The total grilling time will vary slightly depending on your grill’s heat distribution and potato size, so keep an eye on them to prevent burning. Serve immediately and enjoy the perfect grilled potato experience!

Expert Tips for Grilled Potato Perfection

Achieving truly excellent grilled potatoes is all about a few key techniques. Here’s how to master them:

  • The Power of Parboiling: This step is non-negotiable for the best grilled potatoes. “Parboil” means to partially boil before another cooking method. For this recipe, lightly boiling the potatoes first breaks down their starch, making them tender and ensuring a fluffy interior. This pre-cooking prevents them from drying out or remaining hard in the center when subjected to the grill’s intense heat. It also provides a head start on cooking, allowing the grill to focus on developing that desirable crispy crust.
  • Prep Ahead for Ease: Efficiency is your friend, especially when grilling. You can parboil your potatoes up to four days in advance. Once parboiled, drain them well, let them cool completely, and then store them in an airtight container in the refrigerator. This allows for a quick seasoning and grilling session when it’s mealtime, significantly reducing your active cooking time.
  • Embrace High Heat: For that ultimate crispy exterior, high heat is essential. Aim for a grill temperature of around 400°F (200°C) or even slightly higher. The intense heat causes the sugars in the potatoes to caramelize and the exterior to dehydrate and crisp up quickly, forming a delicious crust before the interior has a chance to overcook.
  • Flip Frequently for Even Crispness: Don’t just set them and forget them! Regular flipping (every 2-3 minutes) is crucial. This ensures that all sides of the potato chunks come into contact with the hot grill grates, allowing them to brown and crisp uniformly. For outdoor grills, always use a heavy-duty aluminum foil pouch or a grill basket. This prevents smaller potato pieces from falling through the grates and ensures even cooking without sticking.
  • Uniform Cuts Matter: When cutting your parboiled potatoes into 1-inch chunks, strive for consistency. Potatoes of similar size will cook at the same rate, preventing some pieces from being undercooked while others are burnt.
  • Don’t Crowd the Grill: While it might be tempting to load up the grill with all your potatoes, overcrowding can lead to steaming rather than searing. Give the potatoes enough space to breathe on the grill, allowing the hot air to circulate and promote crisping. Cook in batches if necessary.
  • Experiment with Seasonings: While Italian herbs are a classic choice, don’t hesitate to get creative. Try a sprinkle of smoked paprika and chili powder for a smoky-spicy kick, or rosemary and garlic for an earthy aroma. Lemon zest added post-grilling can also brighten the flavors beautifully.

Storing and Reheating Grilled Potatoes

While these grilled potatoes are best enjoyed fresh off the grill, leftovers can be stored and reheated to retain much of their deliciousness. Place any remaining grilled potatoes in an airtight container and refrigerate for up to four days. To reheat, spreading them on a baking sheet and popping them in a preheated oven (around 375°F or 190°C) for 10-15 minutes, or until warmed through and re-crisped, works best. An air fryer is also an excellent option for restoring their crisp texture in just a few minutes.

Frequently Asked Questions About Grilling Potatoes

Can I use an indoor grill?

Absolutely! This recipe works beautifully on an indoor electric grill. We’ve successfully tested it with models like the Ninja Foodi indoor grill and were delighted with the crispy, flavorful results. Using an indoor grill means you don’t need to worry about the weather outside, nor do you typically need a foil pouch, as sticking to the grates is less of an issue.

Can I use other seasonings?

Yes, the seasoning options are truly endless for grilled potatoes! We love experimenting with garlic salt for a savory boost, blackening spices for a smoky-spicy kick, Cajun spices for vibrant heat, or even a fragrant curry powder blend for an exotic twist. Feel free to customize with your favorite herbs and spices to match any main dish or personal preference.

Can I use other types of potatoes?

While Yukon Gold and Baby Dutch potatoes are our top recommendations for their ideal texture and grilling properties, other potato varieties will also work. Larger potatoes like Russets or Idaho potatoes will need to be cut into smaller, more uniform chunks (e.g., 1-inch) and might require slight adjustments to the parboiling and grilling times. Smaller potatoes might cook faster. Always ensure they are tender from parboiling and then crispy on the grill.

Should I use a foil pouch on an outdoor grill?

When grilling on an outdoor grill, whether charcoal or propane, it is highly recommended to place your seasoned potatoes in a heavy-duty aluminum foil pouch. This prevents them from sticking to the grill grates, falling through, and helps to create a slightly steamy environment that keeps the insides tender while the outsides crisp up beautifully. Just make sure to open the pouch for the last few minutes to allow for maximum crisping.

What’s the best way to get them extra crispy?

For maximum crispiness, ensure your grill is very hot (400°F/200°C or higher). Don’t overcrowd the grill, as this can steam the potatoes instead of searing them. Flip the potatoes frequently (every 2-3 minutes) to expose all sides to the direct heat. Using avocado oil also helps, thanks to its high smoke point, allowing the potatoes to get very hot and crispy without burning the oil.
