Key Ingredients for Perfect Crepes and Compote
This recipe calls for a handful of common pantry staples and fresh ingredients, divided into two main parts: the zesty lemon crepes and the rich homemade blueberry compote. Each ingredient plays a crucial role in creating the ultimate flavor and texture.
- Milk: The foundation of our crepe batter, milk provides essential moisture and helps achieve that characteristic thin consistency. While whole milk is recommended for richness, any dairy or non-dairy milk alternative will work beautifully.
- All-Purpose Flour: For light and tender crepes, accurate flour measurement is key. Avoid packing the flour into your measuring cup; instead, gently spoon it in and level it off with a flat edge, like a butter knife. This prevents dense, heavy crepes.
- Eggs: Eggs are vital for binding the batter and adding a lovely richness to the crepes. Room temperature eggs blend more smoothly, but cold eggs work perfectly well too – no need to stress about pre-warming them!
- Butter: Melted butter contributes to the luxurious texture and flavor of the crepes. If using unsalted butter, a small pinch of salt in the batter will enhance all the flavors. Melt it in short bursts in the microwave to avoid burning.
- Granulated Sugar: A touch of granulated sugar sweetens the crepe batter just enough, and it truly helps to amplify the natural sweetness of the blueberries in the compote, creating a harmonious flavor profile.
- Lemon Juice and Zest: This dynamic duo is what gives our crepes their signature bright, tangy lemon flavor. Freshly squeezed lemon juice adds acidity and a refreshing zing, while the finely grated lemon zest infuses the batter with intense, aromatic lemon oil, making every bite incredibly fragrant.
- Vanilla Extract: Pure vanilla extract acts as a flavor enhancer, deepening the sweetness in the crepes and beautifully complementing the lemon and blueberry notes.
- Blueberries: The star of the compote! This recipe works wonderfully with both fresh and frozen blueberries. However, for the most vibrant flavor and appealing texture, fresh blueberries are often preferred. Remember to sort through them and remove any stems or bruised berries.
- Cornstarch: Mixed with water to create a “slurry,” cornstarch is our secret ingredient for thickening the blueberry compote, giving it that perfect spoonable consistency without making it too heavy.
Crafting these delectable Lemon Blueberry Crepes involves preparing the homemade blueberry compote and the crepe batter separately, then combining them for a truly unforgettable dish.

Step-by-Step Guide to Lemon Blueberry Crepes
1. Prepare the Homemade Blueberry Compote
- In a small saucepan, combine the fresh or frozen blueberries, granulated sugar, and fresh lemon juice.
- Cook this mixture over medium heat, stirring frequently, for about 5 to 7 minutes. Watch as the blueberries begin to soften and burst, releasing their flavorful juices. This gentle simmering process deepens their natural sweetness.
- While the blueberries cook, prepare your cornstarch slurry. In a small bowl, whisk together the water and cornstarch until no lumps remain. This slurry is essential for thickening the compote.
- Add the cornstarch slurry to the bubbling blueberry mixture in the saucepan. Continue to cook for another 2 to 3 minutes, stirring constantly, until the compote has thickened to your desired consistency. Be sure to stir well to prevent it from sticking to the bottom of the pan.
- Remove the saucepan from the heat and allow the compote to cool completely to room temperature. This cooling period is important as it allows the compote to thicken further and develop its full flavor.
2. Master the Lemon Crepe Batter
- Once your blueberry compote is cooling, gather all your crepe ingredients (milk, flour, eggs, melted butter, granulated sugar, fresh lemon juice, vanilla extract, and lemon zest). Add all these ingredients to a blender.
- Blend for approximately 30 seconds until mostly smooth. Then, use a spatula to scrape down the sides of the blender to ensure all ingredients are fully incorporated, and blend for another 30 seconds. The goal is a smooth, lump-free batter.
- Transfer the crepe batter to a bowl, cover it, and place it in the refrigerator to rest for at least 1 hour. This crucial resting period allows the flour to fully hydrate, resulting in a more tender and pliable crepe that is less likely to tear during cooking. It also helps relax the gluten, ensuring those wonderfully light and airy crepes.
3. Cook and Serve Your Crepes
- After the batter has rested and chilled, heat a large (at least 10-inch) nonstick pan or crepe pan over medium heat. Lightly grease the pan. A great tip is to rub a stick of butter directly over the pan rather than adding a pat and letting it melt – this ensures a very thin, even coating and prevents excess butter from making your crepes greasy.
- Pour about ¼ cup of the crepe batter into the center of the hot pan. Immediately lift and swirl the pan in a circular motion to spread the batter thinly and evenly to the edges. Your goal is a perfectly flat, round, and very thin crepe.
- Cook the crepe for approximately 2 minutes, or until the edges start to turn golden brown and the surface is no longer shiny. This indicates it’s ready to flip.
- Carefully flip the crepe with a thin spatula and cook for an additional 1 to 2 minutes on the other side, until lightly golden.
- Continue this process until all the batter has been used, stacking the cooked crepes on a plate. Remember to re-grease your pan lightly after every 4-5 crepes, or as needed, to maintain a nonstick surface.
- To serve, lay each crepe flat and spoon a generous amount of the cooled blueberry compote along the center. Fold or roll the crepes to enclose the filling.
- For an extra touch of elegance and sweetness, dust your finished crepes with powdered sugar or top with a dollop of whipped cream. Serve immediately and enjoy!

Tips and Tricks for Crepe Perfection & FAQs
Achieving restaurant-quality crepes at home is entirely possible with a few insider tips. Here’s how to ensure your Lemon Blueberry Crepes turn out perfectly every time:
- Cooking the Compote: Cook your blueberries until they start to burst and release their juices. This creates a more flavorful and vibrant sauce.
- Prevent Burning: Remember to stir the blueberries frequently while they are cooking to prevent them from sticking and burning on the bottom of the pan.
- Lightly Grease the Pan: When cooking your crepes, the pan should be only very lightly greased. Rubbing a stick of butter directly over the hot pan is an excellent technique for an even, thin coating, which is crucial for perfect crepes.
- Achieve a Perfect Circle: When pouring the batter, quickly swirl the pan to spread it thinly and evenly to the edges. This rapid swirling motion is key to creating that signature flat, round, and delicate crepe.
- Don’t Flip Too Soon: Patience is a virtue when making crepes! Wait until the surface of the crepe is no longer glossy and the edges begin to turn a light brown before attempting to flip it. Flipping too early can cause the delicate crepe to tear.
- Re-grease as Needed: To ensure consistent nonstick performance, remember to re-grease your pan lightly after every 4-5 crepes, or whenever you notice the batter starting to stick.
Frequently Asked Questions
Both the blueberry compote and the crepes should be cooked over medium heat on your stovetop. While it might be tempting to reduce the heat, maintaining a consistent medium heat is important. Cooking at too low a temperature will cause the crepes to cook too slowly and can result in a rubbery texture.
Preparing the crepe batter and compote takes approximately 15 minutes of active work. However, the crepe batter requires a crucial 1-hour resting period in the refrigerator. Once the prep work and chilling are complete, cooking all the crepes is relatively quick, taking about 15 minutes. So, from start to finish, you can expect this delightful recipe to take about an hour and a half.
To prevent crepes from becoming soggy, it’s best to store the crepes and the blueberry compote in separate airtight containers. Only stuff the amount of crepes you plan to serve or eat. Leftovers can be stored in the refrigerator for up to 4 days. When you’re ready to enjoy them, simply assemble and warm gently in the microwave or a lightly greased pan.
Absolutely! If you find yourself with leftover crepe batter after making a batch, it can be stored in an airtight container in the refrigerator for up to two days. This makes it perfect for a quick breakfast another morning.
Rubbery crepes usually point to one of two common issues. Firstly, improper flour measurement can be the culprit. If you scoop flour directly with the measuring cup and pack it, you’re likely using too much flour, leading to a tough texture. Always spoon flour into the cup and level it off. Secondly, cooking crepes on too low a heat can also result in rubbery outcomes; ensure you’re using a consistent medium heat.
Yes, this step is non-negotiable! Refrigerating the batter allows the gluten in the flour to relax and the flour particles to fully absorb the liquid. Skipping this step can result in crepes that are difficult to work with and lack the desired light, airy texture.

Chill Time: 1 hr
Total Time: 1 hr 30 mins
Lemon crepes filled with sweetened blueberry compote creates a sweet and tart blend for the perfect flavor combination.

Ingredients
For the Lemon Crepes
- 1 ¼ cups milk
- 1 cup all purpose flour
- 2 large eggs
- 2 tablespoons butter, melted
- 2 tablespoons granulated sugar
- 2 tablespoons fresh lemon juice
- 1 teaspoon pure vanilla extract
- 1 teaspoon lemon zest
For the Blueberry Compote
- 1 ½ cups blueberries
- 1 tablespoon granulated sugar
- 1 tablespoon fresh lemon juice
- 1 tablespoon water
- 2 teaspoons cornstarch
Instructions
- For the Lemon Crepes:
- Add all of the crepe ingredients (milk, flour, eggs, butter, sugar, lemon juice, vanilla, lemon zest) to a blender and blend for 30 seconds. Scrape down the sides of the blender and blend for another 30 seconds until smooth.
- Place the crepe batter in the fridge to rest for 1 hour. While the crepe batter chills, make the blueberry compote (refer to steps below).
- Heat a large (at least 10”) nonstick pan over medium heat. Grease the pan very lightly with butter (rub the stick over the pan rather than adding a pat and letting it melt—this will help get a more even coating).
- Add ¼ cup of batter to the center of the pan and swirl the pan to spread the batter to the edges, creating a flat, round crepe.
- Cook for 2 minutes, or until the edges begin to brown and the surface is no longer shiny. Then, carefully flip the crepe and cook for an additional 1-2 minutes.
- Repeat steps 4 and 5 until all of the crepes have been cooked. Make sure to re-grease your pan as needed (after every 4-5 crepes).
- To serve, spread the blueberry compote inside each of the crepes and fold or roll them to close.
- Sprinkle with powdered sugar, if desired, and enjoy. The crepes and compote can be stored separately in airtight containers in the fridge for up to four days.
- For the Blueberry Compote:
- Add the blueberries, sugar, and lemon juice to a small saucepan set over medium heat. Cook, stirring often, until the blueberries begin to burst—about 5-7 minutes.
- In a small bowl, stir together the water and cornstarch until smooth to create a slurry. Add the slurry to the blueberries and cook for another 2-3 minutes, stirring constantly, or until the compote has thickened.
- Remove the compote from the heat and set it aside to cool completely to room temperature.
Notes
- Milk thins the crepe batter and adds most of the moisture. Whole milk is ideal, but any milk (dairy or non-dairy) will work.
- Flour gives the crepes structure. Measure using the spoon and level method to avoid dense crepes.
- Eggs add richness and help bind the crepe batter. They can be cold or at room temperature.
- Butter adds additional richness. If using unsalted butter, add a pinch of salt to the batter.
- Granulated sugar sweetens the crepe batter and compote slightly, enhancing the natural sweetness of the blueberries.
- Lemon juice adds acidity and freshness, while lemon zest contributes a classic, aromatic lemon flavor to both crepes and compote.
- Vanilla enhances the sweetness in the crepes and brings out the flavors of lemon and blueberry.
- This recipe can be made with either fresh or frozen blueberries. If using fresh, make sure to remove any stems or mushy berries.
- Water and cornstarch create a slurry that effectively thickens the blueberry compote to a desirable consistency.
