- Add the frozen spinach, sour cream, cream cheese, chicken stock (or water), salt, garlic powder, paprika, and red pepper flakes to the Instant Pot.
- Attach the lid and ensure the valve is in the “sealing” position.
- Set the Instant Pot to Pressure Cook (Manual) for 5 minutes.
- When cooking is complete, perform a manual quick release by switching the valve to the “venting” position. Be careful of steam and potential splatter.
- Once depressurized, remove the lid. Switch the Instant Pot to the Saute-Normal function. Stir the mixture together. It will look slightly curdled at first, which is normal. Continue stirring until smooth and uniform, about 1 minute.
- Next, stir in the Parmesan and mozzarella cheeses. Cook, stirring constantly, until the cheese has melted, the mixture begins to bubble, and the dip has thickened slightly, about 2 minutes.
- This recipe can be made up to an hour in advance and kept warm using the “Keep Warm” setting on the Instant Pot.
- Garnish with additional Parmesan if desired. Serve warm with crackers, chips, toasted baguette, or crudités.
Notes
I’m not a fan of mayonnaise in my spinach dip – I’ve found that it can make the dip a little too rich. However, if you’re a mayonnaise enthusiast, feel free to swap out half of the sour cream for mayo!
Delicious Add-in Options: Enhance your dip with 8 ounces of quartered jarred artichoke hearts (well-drained), 8 ounces of cooked lump crab meat, or 3 slices of cooked, crumbled bacon for extra flavor and texture. Stir these in after the dip is cooked.
Pasta Sauce Base: This recipe also makes a fantastic base for a creamy pasta sauce! Simply add 8 ounces of cooked elbow macaroni (or your favorite pasta) when you stir in the cheeses, and thin as needed with a bit of reserved pasta water or extra chicken stock until you reach your desired consistency.
