How to Make Cranberry Apricot Baked Brie

Creating this stunning Cranberry Apricot Baked Brie is a straightforward process that begins with gathering a few key ingredients. Each component plays a vital role in achieving the perfect balance of flavor and texture, from the creamy cheese to the flaky pastry and the vibrant fruit filling.

Essential Ingredients for Baked Brie

  • Wheel of Brie Cheese: Brie is a classic French soft-ripened cheese, renowned for its creamy, buttery texture and mild, earthy flavor. It melts beautifully, making it the perfect choice for a baked appetizer as it readily absorbs the delightful flavors of the fruit preserves. While some prefer to leave the side rind for structural integrity, for the best melting experience and to fully infuse the fruit flavors, we recommend trimming off the top rind. Our tips below offer guidance on how to easily prepare your brie wheel.
  • Puff Pastry: The magic of puff pastry lies in its ability to create hundreds of delicate, buttery layers when baked. This results in a wonderfully crispy, golden shell that encases the molten brie. Store-bought frozen puff pastry sheets are a fantastic time-saver; just ensure they are thawed enough to be pliable but still chilled. Working with cold puff pastry is crucial for maintaining its flaky texture, so keep it in the refrigerator until you’re ready to use it.
  • Apricot Preserves: The sweet and slightly tart flavor of apricot preserves is a fantastic complement to the rich brie and tart cranberries. Its jammy consistency provides a luscious layer of fruit and helps bind the filling. Feel free to experiment with other fruit preserves like fig, raspberry, or cherry if apricot isn’t available or if you want to try a different flavor profile.
  • Craisins (Dried Cranberries): These sweet and chewy dried cranberries add a burst of festive color and a delightful tartness that cuts through the richness of the cheese. They also provide a pleasant textural contrast within the smooth filling. If craisins aren’t on hand, other dried fruits like chopped dried apricots or cherries can be used as a substitute for a similar effect.
  • Sea Salt: A pinch of high-quality sea salt is essential to balance the sweetness of the preserves and enhance the overall flavors of both the fruit and the cheese. It highlights the savory notes of the brie and brightens the fruit, preventing the dish from becoming overly sweet.
  • Egg: A single whipped egg is used to create an egg wash. This vital step contributes significantly to the visual appeal and texture of your baked brie.
  • Water: A tablespoon of water is mixed with the egg to create the perfect consistency for the egg wash. This mixture, when brushed over the puff pastry, ensures a beautiful, golden-brown finish and a subtle sheen, making your baked brie look professionally prepared.
  • Fresh Cranberries (Optional): Sprinkling fresh cranberries on top towards the end of baking adds an extra touch of seasonal beauty and a burst of vibrant color. These fresh berries offer a tart counterpoint to the sweetness of the preserves and provide a hint of what deliciousness awaits inside the puff pastry. While optional, they truly elevate the presentation.

Step-by-step Instructions

  1. Preheat Oven & Prep Pan: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking and make for easy cleanup. Set it aside.
  2. Prepare Fruit Mixture: In a small bowl, combine the apricot preserves, craisins (dried cranberries), and sea salt. Stir these ingredients thoroughly until they are well mixed, creating a vibrant and flavorful topping for your brie.
  3. Prep Brie: Place the wheel of brie cheese on a cutting board. Carefully slice off the very top rind of the brie. You can then gently press the bottom of a small glass or ramekin into the center of the brie to create a slight “well” or indentation. This helps to hold the fruit mixture in place.
  4. Top the Brie: Generously spoon the prepared fruit mixture over the top of the brie, ensuring it fills the “well” and covers the surface.
  5. Wrap in Puff Pastry: On a lightly floured surface, unroll your sheet of puff pastry. Gently roll it out slightly with a rolling pin to a rough 12-inch square. Carefully place the brie, fruit-side up, in the center of the puff pastry. Fold the sides of the puff pastry up and over the brie, gently tucking them underneath the wheel to create a neat, enclosed package. Ensure there are no large gaps, as this could cause the cheese to leak during baking. If necessary, trim any excess dough to create a snug fit, preventing overly thick or crunchy spots.
  6. Chill the Wrapped Brie: For best results, place the wrapped brie on your prepared baking sheet and chill it in the refrigerator for at least 15-20 minutes. This helps the puff pastry firm up, ensuring it bakes into distinct, flaky layers.
  7. Prepare Egg Wash: While the brie chills, whisk one whole egg with one tablespoon of water in a small bowl until frothy. This is your egg wash.
  8. Vent & Brush: Once chilled, remove the brie from the refrigerator. Using a sharp knife, make two small vent holes on the top of the puff pastry. This allows steam to escape during baking, preventing the pastry from bursting. Gently brush the entire surface of the puff pastry with the egg wash using a pastry brush. This will give it a beautiful golden sheen.
  9. Initial Bake: Place the baking sheet with the brie in the preheated oven. Bake for 15-18 minutes, or until the pastry is slightly puffed and light golden brown.
  10. Second Egg Wash & Topping: Carefully remove the brie from the oven. Brush it once more with any remaining egg wash. If you have any leftover fruit mixture or are using optional fresh cranberries, artfully arrange them on top of the pastry.
  11. Final Bake: Return the brie to the oven and continue baking for another 5-10 minutes, or until the puff pastry is a deep golden brown and the cheese is visibly melted and oozing (if a vent allows).
  12. Serve Immediately: Remove the baked brie from the oven. Allow it to rest for a few minutes before transferring it to a serving platter. Serve warm with your favorite accompaniments and watch it disappear!

Tips and Tricks for the Perfect Baked Brie

Achieving a perfectly golden, flaky puff pastry and a wonderfully gooey center for your baked brie is simple with a few insider tips:

  • Keep Brie Chilled: Begin with a cold wheel of brie. Chilling the brie, especially after applying the fruit topping and wrapping it in pastry, is key. A cold brie will melt more slowly and evenly in the oven, preventing it from bursting out of the pastry too quickly. It also allows the puff pastry to bake properly, developing its signature flaky layers before the cheese becomes a liquid mess.
  • Puff Pastry is Your Friend: While a premade pie crust can work in a pinch, puff pastry dough is highly recommended for its superior flaky texture and buttery flavor that truly elevates this dish. If using frozen puff pastry, ensure it’s thawed just enough to be pliable but still cold. Warm or room-temperature puff pastry becomes sticky and loses its ability to puff up properly.
  • The Power of an Egg Wash: Don’t skip the egg wash! A simple mixture of one whisked egg and a tablespoon of water brushed over the pastry creates that gorgeous, professional-looking golden-brown crust with a beautiful shine. Apply it generously and evenly.
  • Trim Excess Dough: When wrapping the brie, aim for a tight-fitting pastry around the cheese. Any large amount of excess dough will result in overly thick, tough, or unevenly cooked sections of pastry. Trim away any significant overhang, leaving just enough to neatly seal the brie.
  • Score for Aesthetics (Optional): For an extra touch of elegance, you can lightly score the top of the puff pastry with a knife (avoiding cutting all the way through) before applying the egg wash. This creates decorative patterns that become more prominent as the pastry bakes.
  • Create Vent Holes: Always make a few small vent holes in the top of the puff pastry before baking. These tiny openings allow steam to escape from the cheese as it heats, preventing the pastry from cracking or tearing prematurely and ensuring an even bake.
  • Serve Warm, Not Boiling Hot: While baked brie is best served warm, resist the urge to cut into it immediately after pulling it from the oven. Allow it to rest for 5-10 minutes. This short resting period lets the cheese set slightly, making it easier to serve and preventing it from flowing out too quickly.

Serving Suggestions for Baked Brie

A perfectly baked Cranberry Apricot Brie is a versatile appetizer that pairs wonderfully with a variety of accompaniments. Here are some ideas to create an impressive spread:

  • Crackers: Offer an assortment of crackers for textural variety. Classic water crackers, crispy pita chips, whole-wheat crackers, or artisanal crisps with nuts and seeds are excellent choices.
  • Bread: Slices of a crusty baguette, toasted crostini, or even thinly sliced challah bread provide a soft yet sturdy base for scooping up the melted brie and fruit.
  • Fresh Fruit: Complement the baked brie with an array of fresh fruit. Crisp apple slices (like Granny Smith or Honeycrisp), juicy pear wedges, and sweet grapes (red or green) add freshness and contrast.
  • Nuts: A scattering of toasted nuts, such as candied pecans, walnuts, or almonds, adds a satisfying crunch and nutty flavor that harmonizes with the cheese and fruit.
  • Crudités: For a lighter option, serve with fresh vegetable sticks like cucumber, carrots, or bell peppers.
  • Honey or Maple Syrup: A small drizzle of high-quality honey or maple syrup over the top just before serving can add an extra layer of sweetness and shine.
  • Wine Pairing: A light, fruity red wine like Pinot Noir or a crisp white wine such as Sauvignon Blanc or Chardonnay will beautifully complement the flavors of the brie and fruit. For something sparkling, a dry Prosecco or Cava also makes a lovely pairing.

Variations and Customizations

While the Cranberry Apricot Baked Brie is delicious as is, it’s also wonderfully adaptable! Feel free to get creative and customize it to your taste or what you have on hand:

  • Different Preserves:
    • Fig Preserves: A classic pairing with brie, offering a rich, earthy sweetness.
    • Raspberry or Cherry Preserves: For a more intense tart-sweet berry flavor.
    • Peach or Pear Preserves: For a softer, mellow sweetness.
    • Spicy Pepper Jelly: For those who love a sweet and savory kick.
  • Nutty Additions:
    • Toasted Pecans or Walnuts: Mix into the fruit filling or sprinkle on top for added crunch and depth of flavor.
    • Slivered Almonds: A delicate crunch that complements the other ingredients.
  • Herbal Touches:
    • Fresh Rosemary or Thyme: A tiny sprinkle of finely chopped fresh herbs can add an aromatic, savory note that pairs surprisingly well with the sweet fruit and creamy cheese. Add a sprig for garnish!
  • Sweet Enhancements:
    • Brown Sugar or Maple Syrup: A sprinkle of brown sugar or a drizzle of maple syrup can be added to the fruit mixture for extra caramelization and sweetness.
  • Boozy Infusion:
    • A Dash of Liqueur: Stir a teaspoon of Grand Marnier (for citrus notes), Cointreau, or even a fruit brandy into the preserves for a more sophisticated flavor profile.
  • Spiced Up:
    • Pinch of Cinnamon or Nutmeg: Especially lovely for a holiday version, these warm spices can be added to the fruit mixture.
  • Different Cheese: While brie is classic, you could experiment with camembert for a slightly stronger flavor, though its rind is often thicker and may require more thorough trimming.

Make-Ahead and Storage Tips

This Cranberry Apricot Baked Brie is a fantastic make-ahead appetizer, perfect for stress-free entertaining. Here’s how to plan ahead and handle leftovers:

  • Make-Ahead Instructions: You can assemble the entire baked brie (including prepping the brie, adding the fruit topping, wrapping it in puff pastry, and applying the egg wash) up to 24 hours in advance. Simply place the assembled brie on a parchment-lined baking sheet, cover it loosely with plastic wrap, and refrigerate until you’re ready to bake. This allows the flavors to meld beautifully and keeps the puff pastry chilled for optimal flakiness. When it’s time to bake, remove it from the fridge, allow it to sit at room temperature for about 15 minutes while your oven preheats, and then proceed with the baking instructions.
  • Storing Leftovers: If by some miracle you have leftovers, store them in an airtight container in the refrigerator for 3-4 days. The pastry may lose some of its crispness, but the flavors will still be delicious.
  • Reheating Leftovers: For best results, reheat leftover baked brie in a toaster oven or conventional oven at 350°F (175°C) for 10-15 minutes, or until the cheese is gooey and the pastry is warmed through. While you can microwave it for about 30 seconds to warm the cheese, the pastry won’t regain its crisp texture.

Frequently Asked Questions (FAQs)

How long will leftovers keep?

You can store leftover baked brie in an airtight container in the refrigerator for 3-4 days. For reheating, I recommend a toaster oven or conventional oven at 350°F for 10-15 minutes to warm it through and crisp up the pastry. You can microwave it for about 30 seconds, but the pastry won’t be as crispy.

How do you trim the rind off the brie?

To safely and effectively trim the rind, place your palm flat on the top of the brie wheel. Using a sharp, thin knife (a cheese knife or a paring knife works well), carefully slice off the very top rind. Be mindful of your fingers! Once the top is removed, you can then trim the rind off the sides if desired. Some people leave the side rind, but removing it allows for maximum meltiness and fruit infusion. A mandolin can also be used for very thin, even slices, but exercise extreme caution.

Can I use phyllo dough instead of puff pastry?

While phyllo dough can be used, it will result in a much crispier, less buttery crust. You would need several layers of phyllo, brushed with melted butter between each layer, to achieve a similar thickness and structural integrity. The texture will be different, but still delicious if you prefer a lighter, crunchier shell.

What kind of brie cheese is best for baking?

Any good quality, ripe brie wheel will work beautifully. Look for a brie that is soft to the touch but not overly runny. Triple cream brie will be extra decadent and gooey. Avoid overly firm brie as it won’t melt as luxuriously.

What if my baked brie leaks?

Leaking can happen if the pastry isn’t sealed tightly enough or if the vent holes aren’t sufficient. If it does leak, don’t worry! It will still taste delicious. Just be sure to serve it quickly. To prevent this, ensure your pastry is tightly wrapped, all seams are pinched closed, and you have made adequate vent holes for steam to escape.
