Instructions

  • In a large Dutch oven, brown the ground beef over medium-high heat, breaking it into crumbles (approximately 8 minutes). Drain any excess fat.
  • Add the diced celery and cabbage to the pot. Cook until the vegetables are soft and the cabbage is wilted and lightly browned (about 10 minutes), stirring occasionally to prevent sticking.
  • Season with Celtic sea salt and pepper to taste.
  • Add the diced tomatoes (with the liquid from the can – do not drain it off!) and the kidney beans (ensure these are drained and rinsed).
  • Stir well to incorporate all the ingredients.
  • Stir in the garlic powder and paprika, mixing thoroughly.
  • Pour in the beef stock, followed by the dark beer (or additional stock), and water. Stir to combine all liquids.
  • Bring the soup to a gentle simmer, then reduce heat to low. Cover partially and let it simmer for at least 1 hour (or 4 hours on low in a slow cooker) until the soup has thickened and developed a rich, darker red color.
  • Serve immediately. This soup often tastes even better the next day as the flavors deepen!
