Here are just a few compelling reasons why we’re absolutely captivated by this straightforward yet sensational stuffed pork chop dinner:

  • Effortless Cleanup: Simply line your baking sheet with foil, and once dinner is done, lift and discard for minimal fuss – a dream for busy cooks!
  • Convenient Make-Ahead Option: Prepare these delightful pork chops up to two days in advance, refrigerating them until you’re ready to bake. This flexibility ensures a stress-free dinner, ready when you are.
  • Highly Customizable: Adapt the stuffing to suit any palate, even picky eaters! Experiment with different vegetables, a variety of cheeses, or even a blend of herbs to create endless flavor combinations.
  • Diet-Friendly: Naturally low in carbohydrates and compatible with keto diets, making it a fantastic choice for those monitoring their intake without compromising on flavor.

Choosing the Perfect Pork Chops to Stuff

Selecting the right pork chop is crucial for a successful stuffed dish. For optimal results, aim for a thickness between 1/2 inch and 1 inch. This specific range offers the best balance for both easy stuffing and even cooking.

  • Avoid Thin Chops: Pork chops that are too thin (less than 1/2 inch) can be incredibly challenging to slice and create a pocket without tearing through the meat. This makes stuffing difficult and often results in the filling spilling out during baking.
  • Avoid Thick Chops: Conversely, very thick pork chops (exceeding 1 inch) can cook unevenly once stuffed. The exterior might dry out while the center, especially the stuffing, struggles to reach a safe and delicious temperature. It’s paramount that the internal temperature of the stuffed center reaches 135°F (60°C) for both safety and flavor, just like the rest of the pork.

When preparing your chops, you can either butterfly them (slicing horizontally almost all the way through, then opening like a book) or create a deep pocket using a sharp paring knife. The pocket method, as described in our recipe, is often preferred for maintaining the chop’s structural integrity and keeping the filling securely nestled inside. Opt for boneless pork loin chops for the easiest and most consistent results when stuffing. Their uniform shape and lean meat are ideal for this preparation method.

Achieving Pork Chop Perfection: When Are They Done?

For the most tender, juicy, and safe pork chops, internal temperature is your best guide, not appearance or cooking time. Pork is considered fully cooked and safe for consumption once its internal temperature reaches 135°F (60°C) when measured with a reliable meat thermometer. It’s perfectly normal for pork to have a slight pink hue even when fully cooked; this is not an indication of undercooked meat, but rather a characteristic of modern leaner pork cuts.

Always use a digital meat thermometer to verify doneness. Insert the thermometer into the thickest part of the pork chop, away from any bone, and crucially, into the center of the stuffing to ensure it too has reached the target temperature. Once removed from the oven, allow the pork chops to rest for 5-10 minutes. This resting period is vital for carryover cooking, where the internal temperature will continue to rise a few degrees, and allows the juices to redistribute throughout the meat, ensuring every bite is incredibly succulent.

Optimal Baking Temperature for Stuffed Pork Chops

To achieve the most tender and flavorful results for our cheesy baked stuffed pork chops, we recommend baking at a relatively high temperature of 375°F (190°C). This heat level allows the pork chops to cook quickly, sealing in their natural juices, while simultaneously ensuring the cheesy stuffing melts into a gooey, irresistible center. The quicker cooking time at a higher temperature helps prevent the pork from drying out, which is a common concern with leaner cuts like pork chops. This method yields chops that are beautifully browned on the exterior, with a perfectly cooked interior and a luscious, bubbly filling.

Delightful Pairings: What to Serve with Pork Chops

Stuffed pork chops are incredibly versatile and pair beautifully with a wide array of side dishes, making it easy to create a well-rounded and satisfying meal. Their rich, savory flavor profile complements both simple and more complex accompaniments.

Consider these fantastic options to serve alongside your cheesy baked stuffed pork chops:

  • Potatoes: Whether roasted, mashed, or baked, potatoes are a classic companion. Try our Garlic Butter Roasted Potatoes Recipe for a flavorful and easy side that perfectly soaks up any pan drippings.
  • Asparagus: For a fresh and vibrant green vegetable, roasted or steamed asparagus adds a delightful crunch and slightly bitter note that cuts through the richness of the pork.
  • Salads: A crisp, refreshing salad provides a light contrast. A simple garden salad with a vinaigrette or a more substantial option like a Caesar salad works wonderfully. Explore our collection of salads for inspiration.
  • Breads & Rolls: Nothing beats warm, freshly baked bread to sop up the delicious juices. Our Buttery Soft Dinner Rolls or Easy Cheddar Bay Biscuits Recipe are always a hit. For a low-carb alternative, the Keto Garlic Artichoke Rolls Recipe is a fantastic choice.

Cheesy Baked Stuffed Pork Chops Recipe – delicious pork chops stuffed full of cheese and peppers for a delicious easy dinner everyone loves!

Ingredients

  • 2 tablespoons olive oil
  • 4 boneless pork chops, 1 – 1 1/1″ thick
  • 1 small onion, diced
  • 4 cloves garlic, diced
  • ¼ cup mushrooms, diced
  • ½ cup diced bell pepper, we used red pepper, but any color is fine
  • 1 tablespoon montreal steak seasoning
  • ½ cup shredded cheddar or mozzarella cheese

Instructions

  1. In a nonstick pan, add olive oil and heat on medium-high heat until shimmery.
  2. Add garlic, onion, pepper, and mushroom. Season with a generous pinch of salt and pepper.
  3. Cook 5-8 minutes, until softened, browned, and fragrant. Set aside.
  4. Pat pork dry from any liquid in the package with a paper towel.
  5. Using a sharp knife, cut a small pocket into each pork chop so you can stuff it. Insert the point of a small sharp knife horizontally into the fat-covered side. Move the knife back and forth to create a deep pocket about 1 1/2 inches wide – be careful not to rip through the pork chop.
  6. Stuff pork chops with cheese and browned vegetables. You can secure with a toothpick, or leave unsecured and bake. Season well with Montreal steak seasoning (or any seasoning blend you love.)
  7. Bake 15-20 minutes, until a digital thermometer registers 135 degrees throughout. Take care to ensure all stuffing has reached 135 degrees as it can cook unevenly.
  8. When fully cooked, let rest 10 minutes before serving.
  9. Enjoy!
