  • 1 large onion, diced
  • 2 bell peppers, diced
  • 2 crowns broccoli, cut bitesize

  • 1 lb salmon filet
  • salt and pepper, to taste
  • green onions, to garnish

Instructions

  • Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). This will ensure your salmon bakes evenly and efficiently.
  • Prepare the cauliflower by trimming off any excess outer leaves and removing the large, tough stem. This makes it easier to boil and “rice” later.
  • Bring a large stockpot of water to a rolling boil. Carefully add the trimmed cauliflower head to the boiling water and cover the pot. Allow it to cook until it is very soft to the touch, which will make it easy to crumble.
  • While the cauliflower boils, place your salmon fillet on a sheet of aluminum foil. Sprinkle ¼ teaspoon of the taco seasoning evenly over the salmon. Lay the lemon slices on top of the seasoned salmon. Fold the foil securely around the salmon to create a sealed pouch.
