Viejo Vallarta’s location was superb, perched perfectly above the Malecón, offering an ideal vantage point for people-watching and enjoying the rhythmic crash of ocean waves. Its proximity to the stunning Our Lady of Guadalupe Parish, a landmark we both were keen to visit, was an added bonus. For my meal, I indulged in a beef and chicken molcajete – a hearty, flavorful dish served in a traditional volcanic stone mortar.
