Mastering the Strawberries and Cream Cake Recipe

Creating this delightful layered strawberry cake is a joyous process, starting with gathering the right ingredients. Each component plays a vital role in achieving that perfect balance of flavor and texture. Let’s prepare our kitchen for some baking magic!

Essential Ingredients for Your Summer Cake:

  • All-purpose flour (2 cups): This provides the essential structure for our cake, ensuring a tender and perfectly moist crumb that holds up beautifully to the layers of fruit and cream.
  • Baking powder (2 ½ teaspoons): Our secret to a light and airy cake! Baking powder is the leavening agent that helps the cake rise, creating that irresistible fluffy texture we all crave.
  • Kosher salt (¼ tsp): A small but mighty ingredient, salt enhances all the other flavors, balancing the sweetness and adding depth to the cake. Don’t skip it!
  • Eggs (4 large, at room temperature): Eggs are crucial for richness, moisture, and stability. Bringing them to room temperature ensures they incorporate smoothly into the batter, resulting in a more uniform and tender cake.
  • Granulated sugar (1 ½ cups): Beyond sweetness, sugar plays a role in tenderness and helps create that desirable golden-brown crust, adding a lovely caramelization during baking.
  • Unsalted butter (½ cup, cut into cubes): Butter brings a rich, creamy flavor and essential moisture. Using unsalted allows you to control the overall salt content of the recipe.
  • Whole milk (1 cup): Milk contributes moisture and helps create a smooth, well-hydrated cake batter, leading to a tender and delectable result.
  • Vanilla extract (3 tsp): This classic flavor infuses the cake with a warm, aromatic depth that perfectly complements the bright, fruity notes of the strawberries.
  • Vegetable oil (3 tsp): Adding a touch of vegetable oil helps keep the cake incredibly soft and tender, ensuring it stays moist for longer.
  • Strawberries (1 ½ cups, diced, plus more to decorate): The star of our show! Fresh strawberries deliver that juicy, sweet-tart flavor and vibrant color, making this cake undeniably summery.
  • Heavy whipping cream (2 cups): This is whipped into our light, ethereal frosting, providing a delicate contrast to the rich cake and fresh berries.
  • White chocolate Instant Pudding Mix (1 small box): A fantastic secret ingredient! This mix stabilizes the whipped cream frosting, helping it hold its shape beautifully, and adds a subtle, delicious sweetness.
  • Powdered sugar (⅓ cup): Essential for sweetening our whipped cream and contributing to its stable, pipeable consistency.

Once you’ve assembled all your ingredients, you’re ready to embark on the baking adventure. Here’s a detailed, step-by-step guide to creating your perfect strawberries and cream cake:

  • Preparation is Key: Begin by preheating your oven to 350°F (175°C) for at least 20 minutes before you even start mixing the batter. This ensures a consistently hot oven, which is crucial for even baking. Position an oven rack in the center. Next, meticulously grease three 6-inch cake pans with butter, then line the bottoms with parchment paper. This vital step prevents sticking and guarantees your cakes release perfectly.
  • Combine Dry Ingredients: In a spacious bowl, thoroughly whisk together the all-purpose flour, baking powder, and kosher salt. Whisking not only combines them but also aerates the flour, contributing to a lighter cake. Set this mixture aside for later.
  • Whip the Eggs to Perfection: In a separate, clean bowl, beat the room-temperature eggs with an electric mixer on high speed for about 30 seconds. The goal is to incorporate air. With the mixer still running on high, gradually pour in the granulated sugar over almost a full minute. This slow addition allows the sugar to dissolve properly. Continue beating on high until the egg mixture has tripled in volume and turned pale white and fluffy, forming a beautiful ribbon when the beater is lifted.
  • Gentle Heat for Wet Add-ins: In a microwave-safe bowl, gently heat the unsalted butter and whole milk together until the butter is just melted. Be careful not to boil the milk. This warm mixture will help create a tender cake.
  • Bringing It All Together: Carefully fold one-third of the dry flour mixture into the whipped egg mixture until just combined. Overmixing at this stage can lead to a tough cake. Repeat this process with the remaining flour, folding gently. Next, add the vanilla extract and vegetable oil to your warm butter and milk mixture. Then, slowly incorporate this wet mixture into the main cake batter, mixing on low speed for only about 5 seconds until everything is just incorporated.
  • Strategic Baking: Divide about two-thirds of the cake batter evenly into two of your prepared 6-inch cake pans. Now for the strawberry layer: gently fold the fresh, diced strawberries into the remaining one-third of the batter and pour this into the third cake pan. Lightly tap each pan on the counter a few times to release any trapped air bubbles. Bake for approximately 30 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean. Note that the strawberry layer may take a few minutes longer due to the added moisture from the fruit.
  • Cooling with Care: Once baked, allow the cake pans to cool on a wire rack for about 15 minutes. This cooling period in the pan prevents the delicate cakes from breaking. After 15 minutes, carefully invert the cakes onto cooling racks to cool completely. Patience is crucial here; trying to frost warm cakes will result in a melted mess!
  • Prepare for Frosting Perfection (Freeze Bowl): For the ultimate fluffy whipped cream frosting, place a stainless-steel mixing bowl and the whisk attachment of your electric mixer in the freezer for at least an hour before you plan to start. Chilled equipment is key to stable whipped cream.
  • Beat the Cream: Pour the very cold heavy whipping cream and powdered sugar into your chilled bowl. Begin whipping on low speed with the whisk attachment for about 20 seconds, just until the sugar is incorporated. This prevents a cloud of powdered sugar from coating your kitchen!
  • Whip to Soft Peaks: Increase the mixer speed to high and continue whipping until soft peaks form. This usually takes another minute or so. You’ll notice the cream becoming light and airy, holding a gentle shape.
  • Stabilize and Combine: Add the white chocolate instant pudding mix to the whipped cream. Mix on low speed until the frosting starts to come together and thicken. Make sure to scrape down the sides of the bowl to ensure no pudding mix clumps at the bottom. Finish by gently folding the mixture with a spoon to ensure everything is thoroughly combined. Whip for a few more seconds on high to achieve the desired consistency. Be careful not to overmix, as this can lead to a dense, pudding-like frosting rather than a light and fluffy one. While overmixed frosting will still taste good, it will lose its beautiful airiness.
  • Assemble Your Masterpiece: Once the cakes are completely cool and the frosting is ready, it’s time for assembly. Place one plain cake layer on your serving plate. Spread a generous amount of whipped cream frosting over it, then arrange half of your extra fresh strawberries on top. Carefully place the strawberry cake layer next, followed by more frosting and the remaining fresh strawberries. Finally, top with the second plain cake layer. Spread the remaining frosting evenly over the top and work your way down the sides of the cake for a beautiful finish. Decorate with additional fresh strawberries as desired. Keep the cake refrigerated until you’re ready to serve to maintain its perfect texture. Enjoy every delicious bite of your homemade strawberries and cream cake!

Expert Tips and Tricks for Your Best Strawberries and Cream Cake

Achieving the perfect strawberries and cream cake goes beyond just following the steps. These expert tips and tricks will help you elevate your baking and ensure a show-stopping dessert every time.

  • Choose Fresh, Ripe Strawberries: The quality of your strawberries directly impacts the flavor of your cake. Opt for berries that are bright red, plump, and fragrant – these will offer the sweetest and most intense strawberry flavor. Always ensure they are thoroughly washed and completely dry before dicing and incorporating into your cake or using for decoration.
  • Prepare Strawberries in Advance (Maceration): For an extra burst of flavor and moisture, slice your strawberries and gently toss them with a tablespoon or two of granulated sugar (depending on their sweetness) about 30 minutes before assembling the cake. This process, called maceration, draws out their natural juices and intensifies their sweetness. These flavorful juices can then be lightly brushed onto your cake layers for added moisture and a subtle strawberry hint.
  • Utilize Cold Ingredients for Whipped Cream: A stable, fluffy whipped cream frosting is crucial. Always start with very cold heavy whipping cream, a chilled mixing bowl (preferably stainless steel, placed in the freezer for at least 15-30 minutes), and cold beaters or a whisk attachment. This cold environment helps the fat globules in the cream emulsify properly, creating a much firmer and more stable whip.
  • Stabilize Your Whipped Cream: While the instant pudding mix already acts as a fantastic stabilizer, for extra assurance, especially in warm climates, you could consider adding a tiny amount of unflavored gelatin (dissolved as per package directions) or a touch more powdered sugar. This helps the frosting hold its shape for longer periods without weeping or collapsing.
  • Avoid Over-Whipping: Whipped cream can go from perfect to butter very quickly! Watch it closely. Whip until firm, soft peaks form – meaning the cream holds its shape when the whisk is lifted but still has a light, airy texture. If you keep going, it will become grainy and eventually separate into butter and buttermilk.
  • Achieve Even Cake Layers: For a professional-looking layered cake, ensure your cake layers are perfectly flat. Once cooled, use a long, serrated knife to carefully level any domed tops. This creates a stable base for stacking and results in beautiful, even layers.
  • Moisten Cake Layers (Optional but Recommended): For an incredibly moist cake, lightly brush each cake layer with some of the reserved strawberry juice from your macerated berries, or a simple syrup (equal parts sugar and water, simmered until sugar dissolves, then cooled). This adds an extra layer of flavor and ensures the cake remains tender.
  • Thoughtful Layering: When assembling, alternate your cake layers with generous, even spreads of whipped cream and a uniform distribution of fresh strawberries. Ensure each layer is balanced, so your cake stands tall and proud.
  • Chill the Assembled Cake: After assembling, refrigerate your cake for at least one to two hours. This crucial step allows the whipped cream frosting to firm up and the flavors to meld beautifully, making the cake easier to slice and more enjoyable to eat.
  • Decorate Just Before Serving: While the cake can be assembled in advance, for the freshest appearance and taste, decorate the top with extra fresh strawberries just before serving. This keeps the berries vibrant and prevents them from becoming soft or discolored.
  • Serve Fresh and Keep Refrigerated: This whipped cream cake is at its absolute best when enjoyed fresh, ideally within 1-2 days of assembly. Always store it in an airtight container in the refrigerator to prevent the whipped cream from melting and to maintain freshness.
  • Experiment with Optional Flavors: Feel free to customize! A hint of lemon zest in the cake batter or a splash of orange blossom water in the whipped cream can add an intriguing twist and brighten the overall flavor profile.

FAQs

Can I use frozen strawberries instead of fresh ones?

While fresh strawberries offer the best flavor and texture, you can use frozen ones as a substitute. Be sure to thaw them completely and drain them thoroughly to remove any excess moisture, which could make the cake soggy. You might also want to gently blot them dry with a paper towel before adding.

How do I prevent the whipped cream from becoming runny?

To ensure a stable whipped cream, always use very cold heavy whipping cream, and chill your mixing bowl and whisk attachment beforehand. The addition of instant pudding mix in this recipe also acts as an excellent stabilizer. Avoid overmixing, as this can break down the cream’s structure.

How far in advance can I make the cake?

You can bake the cake layers up to two days in advance. Once cooled, wrap them tightly in plastic wrap and store at room temperature or in the refrigerator. For the freshest taste and best texture, assemble the cake with the whipped cream and strawberries on the day you plan to serve it.

Can I substitute whipped cream with another frosting?

Absolutely! While classic whipped cream offers a light and fresh taste that perfectly complements strawberries, you could certainly use cream cheese frosting, mascarpone frosting, or a light buttercream. Keep in mind that these will change the overall texture and richness of the dessert.

How do I store the cake?

Due to the fresh strawberries and whipped cream, this cake must be stored in an airtight container in the refrigerator. It’s best enjoyed within 1-2 days of assembly to maintain the quality of the berries and the freshness of the cream.

Can I add other fruits to the cake?

Yes, absolutely! This cake is wonderfully versatile. Blueberries, raspberries, sliced peaches, or even thinly sliced kiwi can be incorporated alongside or in place of some of the strawberries for a delightful variety of flavors and colors.

Can I make this cake gluten-free?

Yes, with a few modifications. You can use a high-quality gluten-free all-purpose flour blend (one that contains xanthan gum) as a direct substitute for the regular flour. Alternatively, a pre-made gluten-free vanilla cake mix could also be adapted for this recipe.

How can I add more flavor to the cake layers themselves?

For an enhanced flavor in the cake layers, consider brushing them lightly with a simple syrup infused with a dash of vanilla, a hint of almond extract, or a complementary liqueur like Grand Marnier or a strawberry liqueur. This also adds extra moisture.

How can I prevent the cake from becoming soggy?

To prevent sogginess, especially if using frozen or highly juicy fresh strawberries, ensure they are very well-drained. If macerating, you can pat them dry before adding them to the batter or layering. Also, avoid oversaturating the cake layers if brushing them with additional liquid.

Perfect Pairings: What to Enjoy with Strawberries and Cream Cake

A beautifully crafted Strawberries and Cream Cake is a delight on its own, but pairing it with the right beverage or accompaniment can elevate the entire experience. Here are some suggestions to perfectly complement its fresh, sweet flavors:

  • Champagne or Sparkling Wine: The effervescence and crisp, often fruity notes of a good champagne or sparkling wine create a magnificent contrast with the rich cake and sweet berries. The bubbles cleanse the palate, making each bite of cake feel fresh. A rosé sparkling wine would be particularly delightful.
  • Hot Coffee or Espresso: For those who appreciate a classic pairing, the slight bitterness and robust aroma of freshly brewed coffee or a rich espresso provide a wonderful balance to the cake’s sweetness. It’s a comforting combination that enhances both elements.
  • Iced Tea: On a warm day, a tall glass of refreshing iced tea, perhaps with a hint of lemon or mint, offers a light and bright accompaniment. Its subtle astringency cuts through the creaminess of the frosting, making it an ideal summer pairing.
  • Fresh Berry Salad: To double down on the fresh fruit goodness, serve your cake alongside a simple bowl of mixed fresh berries – blueberries, raspberries, and blackberries. This adds even more variety in texture and a deeper spectrum of fruity flavors, creating a truly abundant dessert experience.

  • ¼ tsp kosher salt
  • 4 large eggs, at room temperature
  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, cut into cubes
  • 1 cup whole milk
  • 3 tsp vanilla extract

  • Preheat oven to 350 degrees F (175°C) for 20 minutes before starting the batter. Place shelf in the middle of the oven.
  • Grease 3 6″ cake pans with butter then line with parchment paper.
  • Whisk the flour, baking powder, and salt in a large bowl, set aside.
  • In a separate bowl beat the eggs with an electric mixer on high for 30 seconds.
  • While the beater is still going pour the sugar in slowly, should take you almost a full minute.

  • Heat the butter and milk in the microwave together till butter is melted.
  • Fold the flour into the whipped egg 1/3 at a time then mix on low for 5 seconds.
  • Add the vanilla extract and oil to the butter and milk and add the mixture to the beaten egg.
  • Fill two of the 6″ cake pans with the cake batter, reserving 1/3.
  • Add the fresh diced strawberries to the remaining 1/3 of the batter and pour into a cake pan.
  • Tap each pan on the counter a few times to knock out bubbles then bake for 30 minutes until golden and a toothpick comes out clean. Note: The strawberry cake layer may take slightly longer to bake due to the additional moisture from the fruit.
  • Cool cake pans for 15 minutes, then turn cakes out onto cooling racks.

Whipped Cream Frosting

  • For best results, place a stainless-steel bowl and whisk attachment in the freezer for at least an hour before beginning.

  • Layer the cakes, placing the strawberry cake layer in the middle.
  • Spread the frosting on the top of the cake and work your way down the sides for an even coating.
  • Decorate with more fresh strawberries as desired and keep cold in the refrigerator until ready to serve. Enjoy your delicious homemade Strawberries and Cream Cake!

Notes

If the frosting is too thick, add milk 1 teaspoon at a time to thin it to your desired consistency.
