Ingredients

  • 4 chicken thighs, skin-on, bone-in (or boneless for quicker cooking)
  • 3 tbsp harissa paste (adjust heat to taste)
  • 3 tbsp olive oil, divided

  • 2 cloves garlic, minced

Instructions

  1. Marinate the Chicken

Rub this mixture all over the chicken thighs, ensuring they are thoroughly coated. If using skin-on chicken, gently lift the skin and spread some marinade underneath. Let the chicken marinate for at least 30 minutes at room temperature, or for a deeper flavor, cover and refrigerate for 4-8 hours, or even overnight.

  2. Optional Searing for Crispy Skin

    If you prefer extra crispy skin and richer flavor, heat the remaining 1 tablespoon of olive oil in a large oven-safe skillet (cast iron works wonderfully) over medium-high heat. Once hot, add the marinated chicken thighs skin-side down. Sear for 4-5 minutes until the skin is deeply golden brown and crispy. Flip the chicken and cook for another 2 minutes. Remove the chicken from the skillet and set aside; it will finish cooking in the oven.

  3. Prepare Vegetables for Roasting

    If you skipped searing, arrange the marinated chicken thighs in your baking dish, skin-side up. If you seared the chicken, return it to the same skillet. Distribute the thinly sliced red onion and minced garlic around the chicken. Take your green olives and gently smash each one with the side of a knife or a meat mallet to release their briny juices, then scatter them evenly around the chicken. If using, add the halved cherry tomatoes around the chicken as well.

  4. Bake to Perfection

    Preheat your oven to 400°F (200°C). Place the baking dish or skillet with the chicken and vegetables into the preheated oven. Roast for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) as measured with a digital meat thermometer. About halfway through the baking, use a spoon to baste the chicken with the delicious pan juices and sauce. This helps keep the chicken moist and builds an even richer flavor.

  5. Rest, Garnish, and Serve

    Once cooked, remove the dish from the oven and let the chicken rest for 5-10 minutes. This allows the juices to redistribute, ensuring tender and moist chicken. Garnish generously with freshly chopped parsley and, if using, toasted pine nuts.
