Ingredients

  • 2 tbsp extra virgin olive oil or butter
  • 1 leek, just the white and light green parts, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • ½ onion, diced
  • 8 oz jar dill pickles, diced (save one to slice into thin rounds to garnish, as pictured)
  • 6 cloves garlic, finely minced
  • 3 ½ cups cauliflower florets
  • 1 tbsp dried marjoram
  • Salt and pepper, to taste
  • 8 cups chicken bone broth
  • ½ cup heavy cream
  • 2 tbsp chopped fresh dill
  • optional: pork or chicken bones

Instructions

On The Stovetop:

  • In a large Dutch oven or heavy stockpot, heat the olive oil or butter over medium-high heat until shimmering or melted, about 35 seconds.
  • Add the diced leek, carrots, celery, and onion to the pot.
  • Cook until the vegetables have softened and are lightly browned, stirring occasionally to prevent burning, which typically takes about 6 minutes.
  • Stir in the minced garlic and continue to cook for another 2 minutes until the garlic is fragrant and soft, ensuring it doesn’t burn.
  • Add the diced pickles to the pot and stir to combine. Remember to set aside the pickle juice; do not drain it from the jar.
  • Incorporate the dried marjoram, cauliflower florets, and season with salt and pepper to taste. Stir everything together well.
  • Pour in the reserved pickle jar juice and the chicken bone broth. Bring the mixture to a rolling boil.
  • Optional: For a more traditional Polish flavor and added depth, you can include pork or chicken bones to the soup while it boils. Remove the bones before serving.
  • Allow the soup to boil until it has slightly reduced and the cauliflower is very soft and easily mashable.
  • Using the back of a spoon or a potato masher, lightly smash some of the cauliflower in the soup. You want a lovely thick soup, so aim for a combination of smashed and chunky cauliflower.
  • Stir the soup well to ensure all ingredients are thoroughly mixed and the desired consistency is achieved.
  • Turn off the heat from the stovetop.
  • Gradually whisk in the heavy cream, ensuring it is fully combined into the hot soup without curdling.
  • Return the pan to the heat and bring it back to a gentle simmer (do not boil vigorously after adding cream).
  • Reduce the heat to low and let the soup thicken for about five minutes, stirring occasionally.
  • Serve hot, garnished with thin slices of fresh pickle and a sprinkle of fresh minced dill for an added burst of flavor and visual appeal.

In an Instant Pot:

  • Add all ingredients to the Instant Pot except for the heavy cream. This includes the olive oil/butter, diced leek, carrots, celery, onion, diced pickles, pickle juice, garlic, cauliflower, marjoram, salt, pepper, and chicken bone broth.
  • Secure the lid on the Instant Pot and set the steam release knob to the “Sealing” position.
  • Select the “Pressure Cook” or “Manual” setting and adjust the time to 5 minutes on high pressure.
  • Once the cooking cycle is complete, allow the pressure to naturally release for 10 minutes. This helps to tenderize the ingredients further and prevents foam from escaping.
  • After 10 minutes, carefully turn the steam release knob to the “Venting” position to quick-release any remaining pressure. Ensure all pressure has been released before opening the lid.
  • Using an immersion blender directly in the pot, or by carefully transferring to a regular blender (in batches), smash or blend the cauliflower. Aim for a texture where there are still some small chunks for body, but a good portion is blended for creaminess. Alternatively, use a potato masher for a chunkier soup.
  • Whisk in the heavy cream vigorously until fully combined and the soup is smooth and creamy.
  • Set the Instant Pot to the “Sauté” function on medium heat. Bring the soup to a gentle boil, stirring occasionally, allowing it to thicken slightly. Be mindful not to let it boil too aggressively.
  • Once the soup has boiled and reached your desired thickness, turn off the Instant Pot and serve immediately.
