This One Pan Creamy Lemon Italian Chicken and Asparagus Skillet is a rich and flavorful dish full of hearty creamy chicken flavors – perfect over pasta, rice, vegetables, or straight out of the pan! A rich and creamy Italian chicken and vegetables one pot dinner in under 30 minutes!

Ingredients
- 4 tbsp butter, divided
- ⅛ tsp sea salt*
- 4 chicken thighs, bones removed (skinless or with skin OK)
- 8 cloves garlic, finely diced
- 8 oz cremini mushrooms, stems removed and wiped clean
- 1 bunch asparagus stalks, trimmed
- 1 cup chicken stock
- 1 cup heavy whipping cream or half and half
- ¼ tsp red pepper flakes, less if you don’t want any spice
- ½ cup diced cilantro or parsley, optional
- 2 tbsp lemon juice
- ¼ cup parmesan cheese
Instructions
- Heat a heavy pan (such as a cast iron skillet) on medium-high heat until very hot.
- Add 2 tablespoons of butter, swirl it around the pan, and let it melt until foamy.
- Carefully place the chicken thighs into the hot pan.
- Season the chicken thighs with a pinch of sea salt.
- Cook chicken thighs for approximately 5 minutes on each side, until they develop a beautiful golden-brown crust.
- Once the chicken thighs are well browned, remove them from the pan and set aside on a plate. They will finish cooking later.
- Add the finely diced garlic to the pan, stirring constantly for about 30 seconds until fragrant, being careful not to burn it.
- Add the cremini mushrooms and asparagus to the pan. Sauté, stirring occasionally, until the vegetables are tender-crisp and lightly browned.
- Remove the cooked vegetables from the pan and set them aside with the chicken.
- Carefully drain any excess fat from the pan, but do not clean it out, as the browned bits are full of flavor.
- Return the pan to high heat. Carefully add the chicken stock and lemon juice (watch out for steam). Use a wooden spoon to scrape up any browned bits from the bottom of the pan, incorporating them into the liquid. Bring to a simmer.
- Reduce the heat to medium-high.
- Add the remaining 2 tablespoons of butter to the pan and let it melt into the simmering liquid.
