The Magic of Quick Roasted Sweet Potato

The heart of this incredible salad lies in its perfectly roasted sweet potatoes. Roasting sweet potatoes brings out their natural sugars, transforming them into irresistibly tender, sweet, and slightly caramelized bites that add a depth of flavor unmatched by other cooking methods. This process not only enhances their rich, buttery taste but also provides a wonderful textural contrast to the creamy goat cheese and crisp greens.

To achieve those coveted quick-roasting, buttery-soft sweet potato wedges, follow our simple yet effective instructions below. We aim for pieces that are tender on the inside with a delightful golden-brown exterior, showcasing the perfect balance between soft and slightly crisp edges. These roasting tips will ensure your sweet potatoes are the star component of this magnificent salad.

Tips for Perfectly Roasted Sweet Potatoes:

Preheat your oven to a robust 400°F (200°C). This higher temperature is crucial for achieving that desirable exterior caramelization and tender interior in a shorter amount of time.

  • **Preparation is Key:** Start by peeling your sweet potatoes and cutting them into uniform 1-inch cubes. Uniform size ensures even cooking, preventing some pieces from being undercooked while others are overdone.
  • **Season and Toss:** On a large baking sheet, combine the sweet potato cubes with a generous drizzle of olive oil and a sprinkle of salt. The olive oil helps with browning and prevents sticking, while the salt enhances the natural sweetness of the potatoes. Toss everything thoroughly to ensure each cube is evenly coated. Don’t overcrowd the pan; use two if necessary, allowing space for air circulation for optimal roasting.
  • **Roasting to Perfection:** Roast in your preheated oven for 30-35 minutes. Crucially, halfway through the cooking time (around 15-18 minutes), remove the sheet pan and flip the sweet potato cubes. This ensures all sides get beautifully golden and caramelized, adding a fantastic depth of flavor and texture to your salad. The sweet potatoes should be fork-tender and slightly crisp on the edges when done.
  • **Flavor Boosters:** For an extra layer of flavor, consider adding a pinch of smoked paprika, garlic powder, or a sprig of fresh rosemary to the sweet potatoes before roasting. These additions can elevate the overall taste profile and complement the goat cheese wonderfully.

Once roasted, these sweet potatoes are ready to anchor your salad, bringing warmth and a complex sweetness that elevates the entire dish. They’re so good, you might even find yourself snacking on a few before they make it into the bowl!

Recipe FAQ’s for Sweet Potato Goat Cheese Salad

Can I add chicken to this salad?

Absolutely! This Roasted Sweet Potato and Goat Cheese Salad makes a fantastic base for adding protein. Grilled chicken strips or boiled shredded chicken are excellent additions. They transform the salad into a heartier, more substantial low-calorie meal, perfect for lunch or dinner. The mild flavor of chicken complements the sweetness of the potatoes and the tang of the goat cheese beautifully.

How long will this salad last?

To ensure optimal freshness and prevent sogginess, always dress the salad just before serving. Any leftover undressed salad components can be stored in an airtight container in the refrigerator for up to four days. However, once dressed, the salad will become soggy relatively quickly. Discard any salad that has been pre-mixed with dressing and left for an extended period, as it will likely be a goopy, unappetizing mess.

Can I prepare components of this salad ahead of time?

Yes, definitely! This salad is excellent for meal prepping. You can roast the sweet potatoes up to 3 days in advance and store them in an airtight container in the fridge. The salad dressing can also be prepared 1-2 days ahead of time and stored separately. Just assemble the greens, goat cheese, avocado, pecans, and croutons right before you’re ready to eat, then add your pre-roasted sweet potatoes and dressing.

Are there any substitutions I can make for goat cheese?

If goat cheese isn’t your preference or you can’t find it, several delicious alternatives work well. Feta cheese offers a similar salty tang, though it’s a bit firmer. Crumbled blue cheese can provide a stronger, more pungent flavor if you enjoy that, while a mild, creamy ricotta salata could offer a lighter, softer texture. For a dairy-free option, a good quality vegan feta or a sprinkle of nutritional yeast for a cheesy flavor would be excellent.

What kind of greens are best for this salad?

While the recipe calls for general “salad greens,” specific types can enhance the experience. Arugula is a fantastic choice as its peppery bite beautifully complements the sweet potatoes and creamy goat cheese. Mixed greens, spinach, or even baby kale would also work wonderfully, offering a slightly milder flavor profile. Choose fresh, crisp greens that hold up well to the other ingredients.

Roasted sweet potato and goat cheese salad – delicious easy healthy salad bursting with flavor and filling without breaking the calorie budget.

Ingredients

  • For the Roasted Sweet Potatoes

  • 2 large sweet potatoes, peeled and cut into 1” cubes –

  • 1 tablespoon olive oil

  • 1 teaspoon salt

  • For the Salad Dressing

  • ¼ cup sour cream

  • Up to ¼ cup buttermilk, see notes

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder

  • ½ teaspoon fresh parsley

  • ½ teaspoon salt

  • Freshly cracked black pepper, to taste

  • For the Salad

  • 4 ounces salad greens

  • 4 ounces goat cheese, crumbled

  • 1 avocado, sliced

  • ¼ cup toasted pecans

  • ½ cup croutons

Instructions

  • Roast the Sweet Potatoes
  • Preheat your oven to 400F.
  • Add the sweet potato cubes, olive oil, and salt to a sheet pan and toss to combine.
  • Roast in a preheated oven for 30-35 minutes, flipping the sweet potatoes half way through cooking.
  • Make the Salad Dressing
  • Combine all of the ingredients (except the milk) in a small bowl.
  • Drizzle in the milk until your desired consistency.
  • Store in the fridge until ready to use.
  • Assemble the Salad
  • In a large bowl, combine the salad greens, sweet potato, goat cheese, avocado, pecans, and croutons.
  • Drizzle over the salad dressing, to taste.
  • Enjoy!

Notes

If you don’t have buttermilk, regular milk will work as well.

This dressing can be made up to a day in advance but it may thicken in the fridge– if it does, slowly whisk in milk until it is your desired consistency.

I like to add the sweet potatoes to the salad while they are still slightly warm– it helps soften the lettuce, but that is totally up to you!
