  • 1 large onion, diced
  • 3 cloves garlic, diced
  • 1 bell pepper, diced
  • 2 tbsp sriracha
  • 2 tsp coconut aminos, you can use soy sauce or tamari too, but they contain soy and are not paleo
  • drizzle, sesame oil
  • green onions, to garnish
  • handful pea shoots
  • large iceberg, romaine or other lettuce leaves

Instructions

  1. In a hot pan, add oil and heat until shimmery (about 30 seconds to 1 minute). A shimmering oil indicates it’s hot enough to sear the meat beautifully.
  2. Add the diced fajita meat to the hot pan and cook on high heat for approximately 2 minutes, tossing occasionally to ensure even browning. You want a nice sear on the outside.
  3. Incorporate the diced onions and bell peppers into the pan. Continue to cook on high heat, stirring occasionally, until the vegetables soften and the meat is beautifully browned and caramelized, which should take about 5 minutes.
