A Beloved Holiday Cranberry Citrus Bundt Cake
This Cranberry Orange Bundt Cake holds a special place in my heart, deeply rooted in cherished family traditions. My grandmother’s bundt cakes were a highlight of every Christmas, always infused with the bright, sunny flavor of orange zest and juice. Building upon that beloved foundation, I decided to introduce tart cranberries, transforming it into an even more festive and visually stunning creation that perfectly captures the essence of the holidays.
As this cranberry orange bundt cake bakes, it fills your entire home with an intoxicating aroma – a warm, sweet, and tangy scent that instantly evokes memories of Christmas mornings and joyful celebrations. The secret to its incredibly light and tender texture lies in the careful balance of buttermilk, baking powder, and baking soda. These leavening agents react with the buttermilk to create a beautifully airy crumb, while the addition of Greek yogurt contributes exceptional moisture, ensuring every bite is delightfully soft and never dry. While the cake itself is a masterpiece, garnishing it with a luminous orange glaze and sparkling candied cranberries elevates it to another level of elegance and taste. The leftover candied cranberries aren’t just for decoration; they can also serve as a charming garnish for festive drinks or other holiday dishes, adding a touch of sparkle and flavor. This recipe is more than just a cake; it’s an invitation to create new holiday memories and continue cherished traditions.

Mastering the Cranberry Orange Bundt Cake
Creating this delightful Cranberry Orange Bundt Cake is a straightforward process, but like any baking endeavor, it begins with gathering the right ingredients. Each component plays a vital role in achieving the perfect balance of flavor, moisture, and texture that makes this cake a holiday favorite. Before you start mixing, ensure all your ingredients are measured out and ready to go.
Essential Ingredients for Your Bundt Cake
- Eggs (3 large): These are crucial for building the structure of the bundt cake, providing essential protein and richness. When beaten with sugar, they also help incorporate air, contributing to a lighter, fluffier texture.
- Granulated Sugar (2 cups): Beyond adding sweetness, sugar is vital here to perfectly balance the tartness of the cranberries. It also contributes to the cake’s golden-brown crust and moist interior.
- Unsalted Butter (12 tbsp): Melted unsalted butter infuses the batter with a rich, buttery flavor and adds necessary fat for tenderness. Using unsalted butter allows you to control the overall salt content in the recipe.
- Coconut Oil (1/3 cup): My preferred oil for its subtle flavor and moistening properties, coconut oil is an excellent choice. Alternatively, canola or vegetable oil can be used to add moisture without overpowering the delicate cranberry and orange notes.
- Vanilla Extract (2 tsp): A foundational flavor enhancer, vanilla extract brings a warm, sweet, and aromatic depth that beautifully complements and balances the bright citrus and tart berry flavors.
- Buttermilk (1/2 cup): This acidic dairy product reacts with the baking soda to create a tender, soft crumb. If you don’t have buttermilk, you can easily make a substitute by adding a teaspoon of white vinegar or lemon juice to regular milk and letting it sit for about 5 minutes until it slightly curdles.
- Greek Yogurt (1/2 cup): Greek yogurt is a fantastic addition for moisture, ensuring the cake remains incredibly soft and never dry, even days after baking. Its slight tang also adds a subtle complexity to the flavor profile.
- All-purpose Flour (3 cups): The backbone of the cake, all-purpose flour provides the ideal protein content to create a stable yet light structure for your bundt cake. Sifting it ensures a smooth, lump-free batter.
- Baking Powder (1 tsp) and Baking Soda (1/2 tsp): These powerful leavening agents work in tandem with the buttermilk and yogurt, creating carbon dioxide bubbles that expand during baking, resulting in a wonderfully light and airy cake.
- Salt (1/2 tsp): A pinch of fine-grain sea salt is essential to enhance and draw out the complex flavors of all the other ingredients, ensuring the cake tastes balanced and bright, not flat.
- Cranberries (2 cups): You can use fresh or frozen cranberries, ensuring they are rinsed and thoroughly dried. A key trick to prevent them from sinking to the bottom is to toss them with 1/2 tablespoon of flour before folding them into the batter.
- Orange Zest (1 tablespoon): The zest is where the majority of an orange’s intense aromatic oil resides. It will significantly accentuate and brighten the citrusy, aromatic orange flavor throughout the cake.
For the Sugared Cranberries:
- Water (1/2 cup) and Granulated Sugar (1 ½ cups, divided): These are combined to create a simple syrup, which coats the fresh cranberries before they are rolled in more sugar, creating a beautiful, sparkling, edible garnish.
- Fresh Cranberries (2 cups): Rinsed and dried, these will be transformed into glistening sugared gems.
For the Orange Glaze:
- Confectioner’s Sugar (1 ½ cups): Also known as powdered sugar, it forms the base of the glaze, dissolving quickly to create a smooth, pourable consistency.
- Orange Juice (3 tablespoons): Freshly squeezed orange juice provides the liquid and a burst of fresh citrus flavor for the glaze.
- Orange Zest (1 teaspoon): A touch more orange zest in the glaze further intensifies that bright, aromatic orange essence, making the glaze incredibly flavorful.

Step-by-Step Baking Method
Once all your ingredients are meticulously assembled and at room temperature, it’s time to bring this exquisite Cranberry Orange Bundt Cake to life. Follow these steps carefully to ensure a perfectly baked, moist, and flavorful cake every time.
Prep
Begin by generously buttering and flouring your bundt pan. This crucial step ensures a clean release of your beautifully shaped cake. Make sure to get into all the intricate nooks and crannies of the pan. Preheat your oven to 350°F (175°C) with an oven rack positioned in the center, allowing for even heat distribution.
Make the Wet Batter
In a large mixing bowl, beat the eggs and granulated sugar on high speed for a full three minutes. This extended beating time is essential for incorporating air, which will make your cake light and fluffy, resulting in a pale, airy mixture. Next, gradually add the melted unsalted butter, coconut oil (or your chosen oil), and vanilla extract, blending thoroughly after each addition until everything is well combined and smooth. Finally, incorporate the buttermilk and Greek yogurt, mixing until just blended. Be careful not to overmix at this stage.
Mix the Dry Ingredients
In a separate, medium-sized bowl, sift together the all-purpose flour, baking powder, baking soda, and salt. Sifting is important as it removes any lumps and ensures these dry ingredients are evenly distributed, contributing to a uniform cake texture. Gradually add this dry mixture to your wet ingredients, mixing on low speed until just combined. Overmixing will develop the gluten in the flour, leading to a tough cake, so mix only until no streaks of flour remain.
Finish Batter and Bake
To prevent the vibrant cranberries from sinking to the bottom of your cake during baking, toss them gently with 1/2 tablespoon of flour. This light coating helps them suspend beautifully throughout the batter. Carefully fold the floured cranberries and the fragrant orange zest into the cake batter. Pour the prepared batter evenly into your buttered and floured bundt pan. Gently tap the pan on your counter a few times to release any trapped air bubbles, which helps prevent large holes in the finished cake. Bake for approximately 55-60 minutes, or until a wooden skewer or toothpick inserted into the center comes out mostly clean with a few moist crumbs attached. Allow the cake to cool in the pan for 15 minutes before carefully inverting it onto a wire rack to cool completely. This cooling period in the pan is vital for structural integrity.
Make the Sugared Cranberries
While the cake cools, prepare your sparkling sugared cranberries. In a small saucepan, combine 1/2 cup of water and 1/2 cup of granulated sugar. Bring this mixture to a boil, then reduce the heat and let it simmer gently for about 5 minutes, creating a thin simple syrup. Remove from heat. Pour the warm sugar water over your fresh, rinsed, and dried cranberries in a bowl, tossing to ensure they are fully coated. Using a slotted spoon, remove the cranberries and spread them in a single layer on parchment paper or a metal rack to dry for at least 1 hour. Once dry, roll the cranberries in the remaining 1 cup of granulated sugar in small batches until they are beautifully coated and glistening.
Make the Glaze
For the bright and tangy orange glaze, combine the confectioner’s sugar, freshly squeezed orange juice, and a hint of orange zest in a small bowl. Stir vigorously until the mixture is completely smooth. You are aiming for a thick yet pourable consistency. If the glaze is too thick, add a tiny bit more orange juice, a teaspoon at a time, until the desired consistency is achieved. If it’s too thin, stir in a bit more confectioner’s sugar.
Assemble
Once your bundt cake has completely cooled, generously pour the vibrant orange glaze over the top, allowing it to drizzle down the sides. Arrange the sparkling sugared cranberries artfully on top of the glaze. If you have extra cranberries, consider piling some into the center hole of the bundt cake for an extra festive touch. Slice and serve this beautiful Cranberry Orange Bundt Cake to your eager guests, and enjoy the delightful flavors of the holidays!

Expert Tips and Tricks for Perfect Cranberry Orange Bundt Cake
Baking a beautiful bundt cake is immensely rewarding, and with a few expert tips, you can ensure your Cranberry Orange Bundt Cake turns out perfectly moist, flavorful, and releases flawlessly from the pan every single time.
- Thoroughly Prepare Your Bundt Pan: This is arguably the most critical step for any bundt cake. Greasing your pan exceptionally well is key to preventing your cake from sticking. I find it best to use my fingers to spread softened butter into every crevice, nook, and cranny of the bundt pan, ensuring complete coverage. After buttering, sprinkle a generous amount of flour over the buttered surface. Then, invert the pan and gently tap it to shake out any excess flour. This creates a non-stick barrier that ensures your cake slides out effortlessly, preserving its intricate design.
- Sift Dry Ingredients for Superior Texture: Skipping the sifting step can lead to a lumpy batter and an inconsistent cake texture. Sifting together your flour, baking powder, baking soda, and salt is the ideal way to remove any lumps, aerate the dry ingredients, and ensure they are perfectly combined and evenly distributed throughout the batter. This simple step contributes significantly to a light and tender crumb.
- Embrace Room Temperature Ingredients: For a truly smooth, emulsified, and well-blended batter, it’s crucial to allow ingredients like eggs, butter, and dairy (buttermilk, Greek yogurt) to come to room temperature before mixing. Cold ingredients won’t incorporate as easily with warmer ones, potentially leading to a curdled or uneven batter. Room temperature ingredients blend together seamlessly, creating a uniform mixture that bakes more evenly.
- Add Eggs Gradually for Creamy Texture: When adding eggs to the creamed butter and sugar mixture, incorporate them one at a time, beating well after each addition. This gradual approach ensures the eggs are fully emulsified into the batter, promoting a creamy, smooth texture and preventing the mixture from separating. It also helps to maintain the airy volume achieved from beating the sugar and butter.
- Avoid Overmixing the Batter: Once you’ve added the dry ingredients to the wet, mix only until they are just combined and no streaks of flour are visible. Overmixing develops the gluten in the flour, which can lead to a tough, dense, and chewy cake rather than a tender, moist one. A light hand here is rewarded with a perfect crumb.
- Tap the Pan Before Baking: After pouring the batter into the prepared bundt pan, gently tap the pan on your counter a few times. This simple action helps to release any large air bubbles trapped within the batter. By removing these air pockets, you prevent unsightly large holes from forming in your baked cake, ensuring a beautifully smooth and even interior texture.
- Check for Doneness Accurately: While the baking time is a guideline, ovens can vary. To truly test if your bundt cake is done, insert a wooden skewer or toothpick into the thickest part of the cake. It should come out with just a few moist crumbs attached, but not wet batter. If it comes out clean, it might be slightly overbaked, but a few crumbs indicate perfect doneness.
- Cool Properly for Easy Release: Resist the urge to immediately unmold your bundt cake. Allowing it to cool in the pan for 15-20 minutes after baking helps the cake firm up and contract slightly from the sides of the pan. This makes it much easier to invert onto a wire rack without it breaking or sticking. Ensure it cools completely on the wire rack before glazing, as a warm cake will absorb the glaze rather than allow it to set beautifully on the surface.

Frequently Asked Questions (FAQs)
Here are some common questions about baking and enjoying your Cranberry Orange Bundt Cake:
To maintain its freshness and moist texture, store your Cranberry Orange Bundt Cake in an airtight container at room temperature. It will stay delicious for up to 3-4 days. If the cake becomes slightly stale over time, you can revive individual slices by lightly toasting them in a toaster oven or microwave for a few seconds.
Absolutely! While fresh cranberries provide a vibrant burst of tartness, dried cranberries can be used as a convenient alternative. I highly recommend rehydrating them before baking to restore some moisture and plumpness. Simply place the dried cranberries in a bowl of hot water and let them soak for about 5-10 minutes, then drain them thoroughly before adding to the batter.
Yes, frozen cranberries work perfectly in this recipe. Just make sure to thaw them completely before use and drain any excess liquid to prevent introducing too much moisture into the cake batter, which could affect its texture. Once thawed and drained, proceed with tossing them in flour as directed to prevent sinking.
This Cranberry Orange Bundt Cake freezes beautifully, making it an excellent make-ahead option. To freeze, ensure the cake is completely cooled (without the glaze and sugared cranberries if possible). Wrap it tightly first in plastic wrap, then in aluminum foil, and place it in the freezer. Properly frozen, it will maintain its quality for 3-4 months. Thaw overnight in the refrigerator before glazing and serving.
Converting this recipe to gluten-free is simple by using a high-quality gluten-free all-purpose flour blend. I’ve had great success with King Arthur’s Measure for Measure Gluten Free Flour, which is designed to be a direct substitute for regular flour in most recipes. Ensure all other ingredients, like baking powder, are also certified gluten-free if you have severe allergies.

What to Serve With Cranberry Orange Bundt Cake
This Cranberry Orange Bundt Cake is a showstopper on its own, but pairing it with the right accompaniments can elevate the dessert experience even further. Here are some delightful suggestions to serve alongside your festive bundt cake:
- Whipped Cream: A light and airy dollop of freshly whipped cream is a classic, refreshing choice. Its subtly sweet flavor and delicate texture provide a wonderful contrast to the cake’s moist crumb and the bright tartness of cranberries and orange.
- Vanilla Ice Cream: For a comforting and indulgent experience, a scoop of creamy vanilla ice cream is a timeless companion. The cold, smooth ice cream beautifully melts into a warm slice of cake, creating a harmonious blend of temperatures and flavors.
- Custard or Crème Anglaise: Elevate your dessert with a luxurious drizzle of rich, silky custard sauce, such as crème anglaise. This adds an extra layer of gourmet sophistication and creamy decadence to each bite.
- Fresh Berries: Brighten your presentation and add more fresh flavor with a colorful medley of seasonal berries like raspberries, blueberries, or sliced strawberries. Their natural sweetness and juicy texture beautifully complement the cake’s citrus and cranberry notes.
- Caramel Sauce: A warm, gooey drizzle of caramel sauce can introduce a delightful caramelized sweetness, creating a complex interplay of flavors and textures against the tart cranberries.
- Simple Citrus Glaze (Extra): For an extra burst of zest, consider a second, thinner citrus glaze made with powdered sugar and a mix of orange and lemon juice. This adds a glistening finish and intensifies the cake’s bright, tangy profile.
- Tea or Coffee: A steaming cup of hot tea (earl grey, black, or a fruity herbal blend) or a rich coffee provides a perfect warm beverage pairing. The aromatic qualities of these drinks complement the comforting flavors of the cake, making it an ideal treat for an afternoon or after-dinner indulgence.
- Fruit Compote: Create a custom fruit compote by gently simmering cranberries and orange segments with a touch of sugar and spices like cinnamon or ginger. Spoon this warm, fruity topping over the cake for an added layer of homemade goodness and depth of flavor.
- Crème Fraîche: For a sophisticated touch, offer a spoonful of crème fraîche. Its slightly tangy, rich, and creamy profile offers a wonderful counterpoint to the sweetness and tartness of the bundt cake, balancing the flavors beautifully.
- Dusting of Powdered Sugar: Sometimes, simplicity is best. A light dusting of powdered sugar adds an elegant, snowy finish to the bundt cake, highlighting its beautiful shape without adding excessive sweetness.
