Achieving Perfectly Crispy Bacon for Your Bites
The secret to these sensational Bacon Raspberry Cheese Bites lies not just in the combination of ingredients, but also in the texture of your bacon. Perfectly crunchy bacon adds a vital textural contrast to the creamy cheese and delicate phyllo. There are two primary methods to achieve that ideal crispness, ensuring your bacon doesn’t just taste good, but feels amazing too.
One method involves pan-frying whole slices of bacon until crispy, then letting them cool before crumbling them into small pieces. While effective, our preferred technique for these bites is to cut the bacon before cooking. This method guarantees more uniform crispiness and is surprisingly easier to manage.
Pre-chopping for Optimal Crispness
To prepare your bacon bits, start with cold bacon straight from the refrigerator. Bacon is significantly easier to cut when it’s cold and firm. Use sharp kitchen scissors to snip the slices directly into small, bite-sized pieces. This approach not only saves time but also ensures that each bacon piece crisps up evenly, unlike crumbling larger, cooked pieces which can result in inconsistent textures.
Once your bacon is chopped, pan-fry the bits over medium heat. Stir frequently to ensure all sides cook thoroughly and turn golden brown and wonderfully crispy. Keep a close eye on them, as bacon bits can go from perfectly crisp to burnt very quickly.
Draining for Extra Crunch
After cooking, it’s crucial to let the bacon bits rest on a plate lined with paper towels. This step is non-negotiable for achieving that extra crunch. The paper towels will absorb any excess grease, which, if left on the bacon, could prevent it from getting truly crispy and potentially make your phyllo cups soggy. Allow them to cool slightly and crisp up further as they drain.
Alternative Bacon Cooking Methods
- Oven Baking: For a hands-off approach, spread bacon strips in a single layer on a baking sheet lined with parchment paper or foil (for easier cleanup). Bake at 400°F (200°C) for 15-20 minutes, or until desired crispiness. Once cooled, chop or crumble.
- Air Fryer: For quick and perfectly crisp bacon, arrange strips in a single layer in your air fryer basket. Air fry at 350°F (175°C) for 8-12 minutes, flipping halfway, until golden and crisp.
By following these steps, you’ll achieve bacon bits that are not only perfectly crunchy but also full of savory flavor, ready to complement the sweet raspberry and creamy cheese in your phyllo bites.

Essential Ingredients for These Easy Appetizers
One of the beauties of these cheesy bacon and raspberry bites is their reliance on just a few high-quality, widely available ingredients. We’ve carefully selected components that deliver maximum flavor and texture with minimal fuss, ensuring a delightful appetizer that’s both simple to prepare and incredibly satisfying. For a batch of approximately 15 delightful bites, here’s what you’ll need:
- 1.9 ounce package phyllo cups (typically containing 15 cups): These pre-formed, flaky pastry shells are a true convenience hero. They provide a delicate, crispy base that perfectly complements the creamy filling without the hassle of making your own pastry. You can typically find them in the freezer section of your grocery store, often near puff pastry or other frozen desserts.
- 8 ounces brie or camembert cheese: The star of the creamy element, brie or camembert cheese melts beautifully, offering a rich, buttery, and slightly earthy flavor. Brie is generally milder and more universally appealing, while camembert offers a more robust, rustic, and sometimes pungent taste. Both work wonderfully, so choose according to your preference. Remove the rind before dicing the cheese into small, even pieces.
- ⅓ cup raspberry preserves: This provides the crucial sweet-tart counterpoint to the savory cheese and bacon. Raspberry preserves offer a bright, fruity burst that cuts through the richness, creating a balanced and addictive flavor profile. We prefer preserves for their chunkier fruit texture and typically less sugary profile compared to jams or jellies.
- 4 slices cooked bacon, finely chopped: The savory, smoky, and crunchy element that ties everything together. As discussed earlier, achieving perfectly crispy, finely chopped bacon is key to the texture and flavor of these bites.
With these few, simple ingredients, you’re well on your way to creating an appetizer that tastes gourmet but is surprisingly easy to assemble. The combination of delicate phyllo, melting cheese, vibrant preserves, and crispy bacon creates a symphony of textures and flavors that will leave your guests asking for the recipe.

Exploring Other Preserves and Flavor Combinations
While we absolutely adore these easy appetizers with the bright tang of raspberry preserves, one of the joys of this recipe is its adaptability. The interplay of sweet fruit, creamy cheese, and salty bacon is a classic for a reason, but you can easily customize the flavor profile by swapping out the preserves for other delicious options. Don’t be afraid to experiment!
When selecting your fruit spread, we generally recommend using preserves over jams or jellies. Preserves typically contain larger pieces of fruit and offer a more robust, sometimes slightly tart flavor, along with a thicker, more textured consistency. This chunkier fruit style provides a more satisfying bite and a more pronounced fruit flavor compared to the smoother, often sweeter and thinner texture of jams and jellies.
Here are some of our favorite alternative preserves you can use, each offering a unique twist to your cheese bites:
- Tart Cherry Preserves: Offers a deeper, more intensely tart flavor than raspberry, creating a sophisticated contrast that pairs beautifully with the richness of brie.
- Lingonberry Jam: A Scandinavian favorite, lingonberry jam provides a uniquely tart and slightly bitter flavor, a fantastic pairing for rich cheeses and pork products. Its vibrant color is also a plus!
- Blueberry Preserves: For a slightly sweeter and mellower fruit note, blueberry preserves are an excellent choice. They offer a comforting, familiar sweetness that many will love.
- Fig Preserves: If you’re looking for something a bit more earthy and subtly sweet, fig preserves are a fantastic option. They lend a gourmet touch and pair exceptionally well with brie.
- Apricot Preserves: Apricot brings a delicate sweetness and a hint of floral notes, creating a lighter, brighter flavor profile.
- Spicy Pepper Jelly: For those who love a kick, a good quality spicy pepper jelly can elevate these bites, adding heat and a complex sweet-savory dynamic that is incredibly addictive.
No matter which preserve you choose, ensure it’s of good quality to truly let the fruit flavor shine. The right preserve can transform these simple bites into an entirely new culinary experience.

Recipe FAQ’s
Absolutely! These cheese bites are incredibly convenient for make-ahead party prep. You can fully assemble them in their phyllo cups, arranging them on a baking sheet, then simply wrap the entire tray tightly with plastic wrap. Store them in the refrigerator for up to two days before you plan to bake and serve them. This allows you to focus on other party preparations on the day of your event, making entertaining much less stressful.
You’ll know your bacon cheese bites are perfectly done when the delicate phyllo cups have turned a light, golden brown, indicating they are wonderfully crisp. The cheese inside should be visibly melted and bubbly, creating an irresistible gooey center. Since phyllo cups are very thin, they cook quickly, so keep an eye on them to prevent over-browning.
Yes, you can! To freeze them, assemble the bites as directed but do not bake. Place the unbaked bites on a baking sheet and freeze until solid, about 1-2 hours. Once frozen, transfer them to an airtight freezer bag or container. They can be stored for up to 1 month. When ready to bake, place them directly from the freezer onto a baking sheet and bake at 325°F (160°C) for a slightly longer time, around 10-15 minutes, or until golden and bubbly.
While phyllo cups offer a unique flakiness, if you can’t find them, you have a couple of alternatives. You can use mini puff pastry shells (found in the freezer section), which will give you a richer, buttery crust. Alternatively, you could use mini tart shells or even make your own by cutting puff pastry sheets into squares and pressing them into a mini muffin tin. Adjust baking times as needed for different pastry types.
Certainly! While brie and camembert are ideal for their meltiness and creamy texture, you can experiment with other soft, mild cheeses. Goat cheese, for example, would offer a tangier, brighter flavor, pairing wonderfully with the raspberry. Cream cheese (softened) could also be used for a richer, denser filling. For a sharper profile, consider a small amount of crumbled blue cheese for adventurous palates. Just ensure the cheese you choose melts well.
