Chocolate Chip Pumpkin Spice Cookie Ingredients
First assemble the following ingredients:
- Spice Cake Mix (1 Box) – I prefer a Betty Crockers box cake mix. This mix is all the dry ingredients for the cookies and make this recipe super simple.
- Pumpkin puree (15 oz) – Pumpkin puree adds moisture and a natural moisture to the cookies.
- Vegetable oil (½ cup) – Vegetable oil is an ingredient from the cake mix and adds fat to the mixture so it all comes together.
- Mini chocolate chips (¾ cup) – Mini chocolate chips are perfect for these cookies, I like to use dark or semi-sweet chocolate chips.

Tips and Tricks to Perfect Pumpkin Spice Cookies
Use different Cake Mix. Some people use yellow cake mix in similar recipes, but why would you give up that spice? If you do use a yellow cake mix, make sure to add 1 teaspoon of Pumpkin Pie Spice for the extra pumpkin flavor!
Pumpkin Pie Puree – If you want to up the spice you can use a pumpkin pie mix instead of pumpkin puree.
Don’t Overmix – Overmixing the batter can make the cookies tough so make sure you mix until just combined.
Use Fresh Puree – If you love a real pumpkin flavor try roasting your own pumpkin. Cut a baking pumpkin in half and scoop out the insides. spread a thin layer of oil on the pumpkin and roast inside-down on a baking sheet at 375 until a knife goes into the pumpkin exterior easily.
