Tips and Tricks for Deep Dish Brown Butter Blondies
Use High-Quality Butter – The brown butter is the star of the recipe, so use good-quality unsalted butter for the best flavor.
Watch the Brown Butter Closely – When browning the butter, keep stirring and watch for golden brown bits at the bottom of the pan. Remove from heat immediately to avoid burning.
Let the Butter Cool – Allow the brown butter to cool slightly before mixing with sugar to prevent cooking the eggs.
Use Parchment Paper – Line the pan with parchment paper, leaving an overhang on the sides, for easy removal and cleanup.
Don’t Overmix the Batter – Mix the wet and dry ingredients until just combined to avoid over-developing the gluten, which can make the blondies tough.
Customize Your Mix-Ins – Add chocolate chips, nuts, toffee bits, or even dried fruit for a personal touch. Aim for about 1 1/4 cups total mix-ins.
Bake Evenly – Use a metal pan for better heat distribution or rotate the pan halfway through baking to ensure even cooking.
Check for Doneness – Insert a toothpick into the center; it should come out with a few moist crumbs but no wet batter. Adjust bake time slightly for gooier or firmer blondies.
Let Them Cool Completely – Cool the blondies in the pan for at least 20 minutes to set their structure before cutting.
Enhance the Flavor with Salt – Sprinkle flaky sea salt on top before baking for a sweet-salty contrast that elevates the brown butter flavor.
Store Properly – Keep blondies in an airtight container at room temperature for up to 3 days, or refrigerate for a longer shelf life.
Reheat for Warm Gooeyness – Pop a blondie in the microwave for 10-15 seconds to bring back the gooey texture if served later.
Use a Digital Scale – For precise measurements, especially with the flour, to ensure the right texture every time.
What to Enjoy with Brown Butter Blondies
Cheese(e.g., Cream Cheese or Mascarpone) – A dollop of mildly tangy cheese can create a creamy, savory contrast to the sweet blondies.
Coffee or Espresso – The bold, slightly bitter notes of coffee complement the sweetness and enhance the browned butter’s nuttiness.
Lemon Bars – Lemon bars are tangy, sweet dessert squares with a luscious lemon custard filling atop a buttery shortbread crust, dusted with powdered sugar for a perfect balance of bright and rich flavors.
Blueberry Cheesecake Bars – They are typically easier and quicker to make than a full cheesecake but still deliver the rich flavor and creamy texture that cheesecake lovers enjoy.

The recipe
Deep Dish Brown Butter Blondies
These brown butter blondies are rich, gooey bars with a nutty caramel flavor, packed with mix-ins like chocolate chips or nuts, and baked to golden perfection.
- Serves 9 people
- Prep 10 minutes
- Cook 45 minutes
Ingredients
- 1 cup unsalted butter (2 sticks)
- 1 cup dark brown sugar
- ½ cup granulated sugar
- 2 large eggs
- 1 egg yolk
- 1 tbsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp sea salt
- 1 ¼ cups chopped nuts (optional)
Method
- 1
In a medium saucepan, melt the butter over medium heat.
- 2
Continue cooking, stirring frequently, until the butter foams, turns golden brown, and releases a nutty aroma (about 5-8 minutes).
- 3
Remove from heat and pour the browned butter into a large mixing bowl. Allow it to cool slightly (about 10 minutes).
- 4
Preheat your oven to 350°F (175°C).
- 5
Grease a 9×9-inch deep baking dish or line it with parchment paper, leaving an overhang for easy removal.
- 6
To the cooled brown butter, add brown sugar and granulated sugar. Whisk until smooth.
- 7
Add the eggs, egg yolk, and vanilla extract, and whisk until fully incorporated.
- 8
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- 9
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- 10
Fold in your nuts (if using), ensuring they’re evenly distributed.
- 11
Spread the batter evenly into the prepared baking dish.
- 12
Bake in the preheated oven for 30-35 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out with a few moist crumbs.
- 13
If you like a gooey center, bake closer to 30 minutes; for a firmer texture, bake closer to 35 minutes.
- 14
Let the blondies cool in the pan for at least 20 minutes before slicing.
- 15
Lift the blondies out using the parchment paper overhang and cut into squares or rectangles.
