Crafting Your Own Cheesy Pizza Chicken: A Simple Guide
Transforming chicken into a delightful pizza base might sound unconventional, but it’s remarkably effective and incredibly simple! The key to success lies in a few straightforward techniques that ensure your Low Carb Cheesy Pizza Chicken is a hit with everyone at the table.
Essential Tips for Perfect Chicken Pizza
- Pound Chicken Thin: This is a crucial step for achieving the ideal “crust” texture. By pounding the chicken breasts to an even, thin consistency, you ensure they cook quickly and evenly, becoming nicely crisp and sturdy enough to hold all your delicious toppings. This also helps the chicken absorb the seasonings and flavors more effectively, creating a truly flavorful base.
- Brown, Don’t Fully Cook, the Chicken: You’ll want to brown the chicken breasts thoroughly on both sides in a hot pan before topping them. This initial searing creates a fantastic depth of flavor and a beautiful golden crust. However, there’s no need to cook the chicken all the way through to 165°F (74°C) at this stage. The chicken will continue to cook perfectly in the oven, ensuring it remains juicy and tender while the cheese melts and bubbles.
- Bake Until Cheese is Golden and Bubbly: The final baking step is where the magic truly happens. Once topped with your favorite sauce, cheeses, and pepperoni, the chicken bakes until the cheese is wonderfully melted, bubbly, and slightly browned at the edges. This creates that irresistible, crispy cheese texture that defines a great pizza. Keep an eye on it to achieve that perfect golden finish.
Key Ingredients for Flavorful Results
Beyond the chicken base, selecting quality ingredients for your toppings is essential. Choose a low-carb pasta or marinara sauce that’s free from added sugars to keep it keto-friendly. For cheese, a blend of mozzarella and parmesan offers the best combination of meltiness and sharp flavor. Don’t shy away from adding extra Italian seasonings or a sprinkle of garlic powder to enhance that classic pizza taste. Fresh cilantro, or even fresh basil, can add a bright, aromatic finish if desired.

Perfect Pairings: What to Serve with Your Cheesy Pizza Chicken
While Cheesy Pizza Chicken is undeniably satisfying on its own, pairing it with the right side dishes can elevate your meal into a complete and balanced low-carb feast. The rich flavors of the chicken and cheese complement a variety of light and fresh accompaniments.
Simple & Delicious Side Dish Ideas
- Crisp Green Salad: A simple mixed green salad with a light vinaigrette is always a fantastic choice. The freshness and acidity cut through the richness of the pizza chicken beautifully.
- Roasted Vegetables: Non-starchy vegetables like broccoli, asparagus, zucchini, or bell peppers roasted with a drizzle of olive oil and herbs make for a healthy and flavorful side.
- Zucchini Noodles or Cauliflower Rice: If you miss pasta or rice, these low-carb alternatives are excellent. Sautéed zoodles with a touch of garlic or flavorful cauliflower rice can soak up any extra sauce.
- Garlic Parmesan Green Beans: Quick and easy, these add a delightful crunch and savory note to your meal.

Ingredients
- 2 chicken, butterflied and cut into two
- 1 tbsp garlic powder
- 1 tbsp italian seasonings
- 1 tbsp celtic sea salt
- 2 tbsp olive oil
- 1 cup pasta sauce
- 1 cup mozzarella, I like using thick strings
- ¼ cup parmesan
- 12 pepperoni
- cilantro, optional
Instructions
-
Preheat oven to 375 degrees F (190°C).
-
Butterfly chicken breasts and then cut each into two thinner pieces, or pound them to an even thickness.
-
Season each chicken breast piece generously with garlic powder, Italian seasonings, and Celtic sea salt.
-
Add olive oil to a heavy-bottomed pan or oven-safe skillet and heat over medium-high heat until it shimmers.
-
Add chicken to the pan in batches, ensuring not to overcrowd. Brown each side well, about 4 minutes per side, until golden. The chicken does not need to be cooked through to 165°F (74°C) at this stage; it will finish cooking in the oven.
-
Transfer the browned chicken breasts to a baking sheet (or leave them in the oven-safe skillet). Top each piece generously with pasta sauce, a sprinkle of more herbs if desired, and then a layer of mozzarella and parmesan cheese.
-
Arrange the pepperoni slices over the cheese layer on each chicken piece.
-
Bake for 25-30 minutes, or until the cheese is bubbly, melted, and golden-brown, and the chicken has reached an internal temperature of 165°F (74°C).
-
Serve hot, topped with fresh cilantro if desired for an extra burst of flavor.
