Vegan Keto Fried Rice: A Plant-Based Delight

This recipe was thoughtfully crafted to accommodate two distinct, yet equally delicious, dietary approaches: it’s both keto-approved and remarkably vegan-friendly. Enjoy a rich, satisfying meal without compromising your plant-based values.

While eggs can certainly elevate the flavor (see instructions below), this easy keto side dish is perfectly balanced and incredibly flavorful even without them. To achieve a hearty, savory profile in the vegan version, we rely on nutrient-dense additions like flax meal for texture and a boost of healthy fats, alongside crunchy pumpkin seeds, cashews, or peanuts for essential protein and a delightful crunch.

To further enhance the fiber content, healthy fats, and protein profile of your vegan keto fried rice, consider incorporating other wholesome ingredients. Hemp hearts, walnuts, or additional flax seeds are excellent choices that contribute to both nutritional value and a more complex texture. Feel free to experiment with your favorite nuts and seeds to customize this versatile dish to your liking.

Keto Fried Rice With Egg: An Optional Enhancement

If you cherish the addition of scrambled eggs in your fried rice, you’re in luck! This recipe embraces eggs beautifully, making the dish even more flavorful and substantial. Integrating eggs is simple and adds a lovely depth of taste and texture to your keto fried rice.

To incorporate eggs into your keto fried rice, follow these straightforward steps:

  • Prepare the vegetable “rice” according to the main recipe instructions.
  • As the vegetables begin to soften in the pan, crack two eggs into a small bowl.
  • Whisk the eggs vigorously until they are light, frothy, and thoroughly combined. This helps create delicate ribbons rather than large clumps.
  • Increase the stove heat to high to ensure quick cooking.
  • While continuously tossing the softening vegetables in the pan, slowly drizzle in the beaten eggs.
  • Continue stirring rapidly for about 30-60 seconds, allowing the eggs to cook into thin, tender ribbons that are evenly distributed throughout the dish.
  • Once the eggs are fully cooked, proceed with garnishing and serve your enriched keto fried rice immediately.

Keto Soy Sauce Alternatives: Flavor Without Compromise

Since traditional soy sauce contains wheat and often added sugars, making it unsuitable for a strict keto diet, finding a delicious and approved substitute is crucial for authentic fried rice flavor. Thankfully, excellent low-carb alternatives exist that deliver all the savory depth you crave.

For this recipe, where the rich umami sauce is paramount to the overall flavor, we highly recommend using Coconut Aminos. This natural, soy-free alternative offers a fantastic savory-sweet profile without the carbs. For an extra punch of flavor, especially if you love garlic, opt for Garlic Coconut Aminos. A touch of nutritional yeast can also be added to enhance the cheesy, umami notes, creating an even more complex and satisfying sauce.

These keto-friendly ingredients are becoming increasingly popular and are widely available. You can often find Coconut Aminos and nutritional yeast in the international or health food aisle of most grocery stores, or conveniently order them online. What To Serve With Keto Fried Rice: Perfect Pairings

This healthy keto fried rice, while light, feels incredibly hearty and satisfying. Its delightful balance of salty, crunchy, and subtly sweet flavors makes it a versatile dish that can stand alone or beautifully complement a variety of mains. It’s an excellent choice for a quick lunch or a robust dinner component.

I personally love pairing this flavorful fried rice with a range of keto and low-carb proteins. Consider serving it alongside sweet chili glazed salmon burgers for a vibrant Asian-inspired meal, or with crisp pan-fried asparagus for a lighter option. It also makes a fantastic side for heartier dishes like tender slow cooker ribs, or even unexpected pairings such as flavorful paella kebabs, perfectly pan-fried pork chops, or crispy air-fried chicken drumsticks.

How To Store Keto Fried Rice: Keeping It Fresh

Proper storage is key to enjoying your keto fried rice leftovers and preventing food waste. With just a few simple tips, you can keep this delicious dish fresh and flavorful for future meals.

  • Choose the Right Container: To maintain optimal freshness and prevent flavor absorption, store your fried rice in the smallest possible container that fits the portion. This reduces air exposure, which can degrade quality.
  • Avoid “Tupperware Taste”: This dish is particularly prone to absorbing flavors from plastic containers. We highly recommend using a glass container for storage to ensure your fried rice retains its pure, intended taste without any unwanted plastic notes.
  • Prompt Refrigeration or Freezing: Always refrigerate or freeze leftovers immediately after cooling to room temperature (within two hours of cooking). Store in the refrigerator for up to four days for best quality and safety, or freeze for up to three months. When freezing, ensure the container is airtight to prevent freezer burn and preserve texture.

How To Reheat Keto Fried Rice: Best Methods

Reheating keto fried rice correctly can significantly impact its texture and flavor. While it reheats beautifully, here are our recommended methods to ensure it’s as delicious as when freshly made:

  • Pan-Frying Method (Recommended): For the best results, resembling the initial fresh-cooked texture, reheat your keto fried rice in a pan. Add 1 tablespoon of avocado oil (or other high-heat cooking oil) to a non-stick pan over medium-high heat. Add the fried rice and stir-fry until it’s piping hot throughout, breaking up any clumps. This method helps restore some of the crispness to the vegetables.
  • Microwave Method: If you’re short on time, the microwave is a convenient option. Place the fried rice in a microwave-safe dish and heat for 1-2 minutes on high, stirring halfway through to ensure even heating. Adjust heating time as needed until thoroughly hot.
  • Oven/Toaster Oven Method: For a slightly crispier texture without a pan, place the fried rice in a foil pouch or oven-safe dish. Heat in a preheated oven or toaster oven at 350°F (175°C) for 10-15 minutes, or until piping hot. This method can help prevent it from becoming too soft.

While this dish freezes and reheats wonderfully, always ensure that it is heated all the way through to a safe internal temperature (165°F or 74°C) to reduce the risk of any cross-contamination or foodborne illness.

Crafting Your Own Vegetable Rice: Tips for Perfect Texture

The secret to exceptional keto fried rice lies in perfectly prepared vegetable “rice” that mimics the texture of traditional grains without the carbs. Making your own vegetable rice is surprisingly simple and allows for complete control over the final consistency.

For the best results, you’ll need to finely dice, chop, shred, or “rice” the stems of both broccoli and cauliflower. While the florets (crowns) of these vegetables can be used, I find they tend to become too soft and mushy when cooked, leading to a porridge-like texture. To achieve that satisfying, slightly toothy bite reminiscent of actual rice, I highly recommend focusing on the firmer stems.

To prepare: Carefully remove the woody bottom parts of the stems. Then, using a food processor with a grating attachment or a sharp knife, process or finely dice the remaining, tender parts of the stems until they resemble grains of rice. This technique ensures a more substantial and pleasant mouthfeel in your fried rice.

For ultimate convenience and to save on prep time, you can also opt for pre-riced bags of cauliflower and broccoli rice, readily available in most grocery stores. These pre-packaged options are a fantastic shortcut that makes this recipe even easier to whip up on busy weeknights, without compromising on the low-carb benefits.

Easy Keto Fried Rice Recipe

By: Courtney O’Dell
Servings: 4
Prep: 5 minutes
Cook: 10 minutes
Total: 15 minutes
A vegan fried rice bowl made with a mixture of vegetables and seeds.
This delicious keto fried rice is a super simple, flavorful side dish or a versatile base for your favorite protein, perfect for any low-carb meal!

Equipment

  • Pumpkin Seeds
  • Coconut Aminos (Soy-Free Seasoning)
  • Large Wok or Skillet

Ingredients

  • 2 tbsp avocado oil
  • 1 large shallot, diced
  • 2 cups diced broccoli stems, remove woody bottom bit, use anything but the bright green leafy tops – save for another recipe*
  • 2 cups diced cauliflower stems, remove woody bottom bit, use anything but the bright green leafy tops – save for another recipe*
  • 2 carrots, peeled and diced*
  • 2 stalks celery, diced*
  • 2 cloves garlic, diced
  • ½ cup pumpkin seeds
  • 1 tsp fresh cracked pepper
  • ¼ cup garlic coconut aminos

Instructions

  1. In a large pan or wok, heat 2 tablespoons of avocado oil over medium-high heat until it shimmers, typically about 1 minute.
  2. Add the diced shallots to the hot oil and stir occasionally. Cook for approximately 2 minutes, or until they are lightly browned and softened, releasing their aromatic fragrance.
  3. Stir in the diced broccoli and cauliflower stems, carrots, and celery. Ensure all vegetables are evenly distributed in the pan.
  4. Season the vegetables generously with fresh cracked pepper. (Avoid adding salt at this stage, as coconut aminos can be naturally quite salty, and you can adjust seasoning later if needed). Toss everything together thoroughly to coat.
  5. Continue to cook on medium-high heat, stirring occasionally, for about 5 minutes. The vegetables should soften slightly and become wonderfully aromatic. Avoid overcooking to retain a pleasant, slightly crisp texture.
  6. Pour in the garlic coconut aminos. Toss vigorously to ensure all the vegetables are evenly coated in the rich, savory sauce.
  7. If adding eggs, crack two eggs into a small bowl and whisk them vigorously until well combined. Slowly drizzle the whisked eggs over the dish while continuously tossing. This technique will create delicate “ribbons” of cooked egg rather than large, dense clumps. Cook until the eggs are set.
  8. Remove the pan from the heat. Garnish your keto fried rice with fresh parsley, sesame seeds, or diced peanuts for added flavor and crunch, if desired.
  9. Serve your delicious Easy Keto Fried Rice immediately and enjoy!

Notes

*For ultimate convenience, you can easily substitute the diced vegetables with one 16 oz bag of pre-prepped cauliflower hash, vegetable rice, or broccoli rice (ensure it’s uncooked diced cauliflower and broccoli stems).
