Crafting the Perfect Chicken Fajita Seasoning
The heart and soul of any outstanding fajita dish lie in its seasoning. Given that these chicken fajitas rely on a relatively short list of ingredients, every flavor you introduce will stand out prominently. Therefore, selecting or crafting a seasoning blend that you absolutely adore is paramount, as it will define the entire flavor profile of your meal. A well-balanced fajita seasoning provides that signature warmth, a hint of spice, and an inviting aroma that makes the dish irresistible.
While many store-bought fajita mixes are readily available, some contain added sugar, which can alter the classic savory and spicy balance. For this recipe, we prefer a sugar-free blend to let the natural flavors of the spices and fresh ingredients shine through. However, if you enjoy a touch of sweetness, feel free to experiment by adding half a teaspoon to one teaspoon of white sugar to your seasoning mix. This small addition can subtly enhance the savory notes and create a more complex flavor.
For those who prefer the convenience of pre-made spices, a high-quality store-bought fajita mix will work wonderfully. But for an unparalleled flavor that you can customize to your liking, we highly recommend trying our homemade Chicken Fajita Seasoning recipe below. It’s simple to prepare and offers a fresh, vibrant taste that truly elevates the dish. The inclusion of cornstarch in our blend is a clever trick; it not only helps the spices adhere beautifully to the chicken and vegetables but also contributes to a slightly crispy texture and helps to create a light, flavorful sauce as the ingredients cook.

To make your own exquisite chicken fajita seasoning, simply combine the following ingredients:
- 1 tablespoon cornstarch

- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon ground cumin

Mastering the Restaurant-Style Fajita Sizzle
One of the most iconic aspects of restaurant fajitas is that show-stopping sizzle. Recreating this exciting presentation at home is much simpler than you might imagine, requiring just a few minor modifications to your cooking process. The key lies in strategic use of heat and timing, ensuring that dramatic steam and tantalizing sound that brings the restaurant experience right to your dining table.
- Firstly, for the ultimate sizzling presentation, you’ll actually cook your fajitas in a regular skillet, but you will still need a cast iron pan for serving. Place your empty cast iron pan into the oven and preheat it to the highest possible temperature your oven allows while you cook the fajitas in a separate pan on the stovetop. This ensures your serving pan is scorching hot and ready to create that impressive sizzle upon contact.
- Next, toss your sliced chicken strips generously with the prepared fajita spices until thoroughly coated. Cook the seasoned chicken in your stovetop pan until it’s beautifully browned and nearly cooked through, developing a delicious crust.
- Once the chicken is almost done and your cast iron pan in the oven is SCORCHING hot (be extremely careful!), remove the cast iron pan from the oven using thick oven mitts and place it immediately on a heat-safe trivet or a sturdy, protected surface.
- Working quickly and with utmost caution, add your sliced bell peppers and onions to the intensely hot cast iron pan. Immediately follow by arranging the cooked chicken over the vegetables.
- For the grand finale, swiftly pour 1 tablespoon of soy sauce and 1 tablespoon of oil directly into the pan. The combination of liquid hitting the superheated cast iron will instantly create that signature, dramatic sizzle, releasing a fragrant cloud of steam just like at your favorite restaurant!
- Allow the vegetables to cook for a minute or two as the sizzling gradually subsides, absorbing the flavors and softening slightly. Then, serve your sensational, sizzling plate of fajitas immediately to wow your guests and yourself with an unforgettable culinary experience! The residual heat of the cast iron will continue to cook the vegetables to perfection, giving them a delightful tenderness while maintaining a slight bite.

One Pot Chicken Fajitas Recipe

Equipment
-
Lodge L10SKL Cast Iron Pan, 12″, Black
Ingredients
- 1 tablespoon cornstarch
- 2 teaspoons chili powder
- 1 teaspoon salt
- 1 teaspoon paprika
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ¼ teaspoon cayenne pepper
- ½ teaspoon ground cumin
- 2 tbsp avocado oil, or other high heat oil
- 1 tsp salt
- 1 tsp pepper
- 1 lb chicken, sliced into strips
- 1 white onion, sliced into half rounds
- 1 bell pepper, sliced into thin strips
- 3 cloves garlic, diced
- 1 jalapeno, sliced
- ¼ cup cilantro chopped
- 2 oz lime juice
Instructions
Chicken Fajita Seasoning
-
In a small bowl, combine cornstarch, chili powder, salt, paprika, onion powder, garlic powder, cayenne pepper, and cumin. Mix all ingredients thoroughly until well combined.
-
Set the homemade seasoning mix aside, ready for use.
Chicken Fajitas
-
Begin by slicing your chicken breasts into long, thin, uniform strips. This ensures even cooking. Season the chicken generously with salt and pepper to taste.
-
Heat a cast iron skillet over medium-high heat until it is extremely hot, but not yet smoking. The high heat is crucial for a good sear.
-
Add the avocado oil (or your preferred high-heat oil) to the hot pan and swirl it around until it shimmers, indicating it’s ready for cooking.
-
Carefully add the seasoned chicken strips to the hot pan. Allow them to brown, stirring often to prevent sticking and ensure even cooking. The chicken should cook quickly due to the high heat.
-
After about 2 minutes, when the chicken is nicely browned but not yet fully cooked through, add the sliced white onions and bell peppers to the pan with the chicken.
-
Continue cooking the chicken, peppers, and onions together, stirring occasionally, until the vegetables have softened and developed some browning, and the chicken is fully cooked. This typically takes about 5 minutes.
-
Evenly sprinkle the prepared seasoning mix over the chicken and vegetables. Stir vigorously to coat everything thoroughly. Add the lime juice to help distribute the seasoning and add a bright, fresh flavor. If the seasoning seems too dry or doesn’t spread well, add up to 2 tablespoons of water to help it coat more evenly.
-
Remove the skillet from the heat. Finish by sprinkling fresh chopped cilantro over the fajitas. Serve immediately while hot and fresh!
