Ingredients 

  • 12-18 small tomatoes, I used campari
  • 2 tablespoons olive oil
  • 4-6 cloves garlic
  • 1 tablespoon celtic sea salt
  • 1 teaspoon garlic powder
  • 1 teaspoon fresh cracked pepper
  • 2 tablespoons grated parmesan
  • 4-6 sprigs fresh basil, minced

Instructions 

  1. Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius).
  2. Using a sharp serrated knife, carefully slice the tomatoes in half and arrange them cut-side up in a baking dish.
  3. Drizzle the olive oil evenly over all the tomato halves in the dish.
  4. Generously sprinkle the tomatoes with garlic powder, sea salt, and fresh cracked pepper.
  5. Tuck the whole garlic cloves amongst the tomatoes in the pan, allowing them to roast and soften.
  6. Evenly top the tomatoes with the grated Parmesan cheese and the minced fresh basil.
  7. Bake in the preheated oven until the tomatoes are softened to your desired tenderness, approximately 15-20 minutes for smaller tomatoes.
  8. Serve immediately as a vibrant and flavorful side dish, and enjoy the wonderful aroma!
