Why You’ll Love This Turkey in a Bag Recipe
Preparing the centerpiece of a holiday meal, such as a Thanksgiving or Christmas turkey, can often feel daunting. Many home cooks face a litany of challenges: the turkey cooks slowly, internal temperatures are uneven, the delicate breast meat inevitably dries out, and the skin can end up disappointingly flabby instead of crisp. These common pitfalls can make the entire process stressful and lead to less-than-perfect results. However, this holiday season, turkey dinner doesn’t have to be a source of anxiety.
I’ve discovered a truly foolproof secret to roasting turkey that eliminates these problems, offering what I believe is the absolute best way to roast a turkey, ever. The revolutionary, yet surprisingly simple, trick? Roasting the turkey inside a humble brown paper bag!
Yes, you read that right – an ordinary paper bag. Even the clean, sturdy brown paper grocery bag you brought your turkey home in can work wonders (though specialized parchment roasting bags are also excellent). The magic lies in the enclosed environment the bag creates. As the turkey roasts, the bag traps and circulates steam around the bird. This natural basting process helps the turkey cook faster and, crucially, much more evenly. The consistent moisture prevents the breast meat from drying out while simultaneously promoting a beautifully golden and crispy skin, thanks to the butter and herbs applied underneath and on top.
By harnessing the power of steam and controlled heat, this method ensures consistently tender, incredibly juicy turkey meat every single time. It’s an easy, delicious, and stress-free approach that guarantees a perfect bird, allowing you to focus on enjoying the holiday with your loved ones rather than fretting over your roast.
Essential Ingredients for Roasting Turkey in a Bag
This effortless Thanksgiving turkey recipe doesn’t demand a multitude of specialized tools, but a few standard kitchen essentials will help you achieve a perfectly roasted, never-dry turkey every time. Here’s a detailed look at the ingredients and their role:
- 1 Whole Turkey (10 to 20 lbs, brought to room temperature): The star of your holiday table. Starting with a turkey at room temperature is crucial for even cooking, ensuring both the white and dark meats reach their ideal doneness without drying out.
- Salt and Pepper: The foundational seasonings that work to amplify the turkey’s natural flavors, adding essential depth and aroma. Don’t be shy with generous seasoning!
- 1 Onion (Peeled and Cut into Large Pieces): Placed inside the cavity, the onion releases sweet and savory aromatic compounds that infuse the turkey from within, contributing to richer drippings for your gravy.
- 1 Celery Stick (Chopped): Offers a subtle, earthy, and slightly peppery flavor that complements the other cavity aromatics and herbs, enhancing the overall savory profile of the bird.
- 1 Carrot (Chopped): Adds a touch of sweetness and depth to the internal cavity, which, like the onion and celery, contributes significantly to the richness of the pan drippings for a luscious gravy.
- 1 Lemon (Quartered): Provides a bright, zesty acidity that beautifully cuts through the richness of the turkey and butter. The steam created by the lemon inside the cavity helps keep the turkey moist and adds a fresh, fragrant note.
- 6 tbsp Butter (Softened): This is key for both moisture and flavor. Rubbing softened butter directly onto and under the turkey skin ensures a gloriously golden, incredibly crispy crust while basting the meat from the outside as it cooks.
- 2 tbsp Italian Herb Blend: A classic mix typically including basil, oregano, rosemary, and thyme. These herbs impart warm, earthy, and aromatic notes, deeply flavoring the turkey for that quintessential holiday taste.
- 1 Cup Chicken Broth: Poured into the roasting pan (or sometimes directly into the cavity, as per some variations), the broth adds moisture to the cooking environment, prevents burning, and provides a flavorful liquid base for pan drippings and gravy.
- Large Parchment Paper Bag or Brown Paper Shopping Bag: This is the hero of the recipe! The bag acts as a mini-oven, trapping steam and heat around the turkey. This unique environment effectively self-bastes the bird, ensuring maximum juiciness and promoting beautifully browned, crispy skin without constant attention. Ensure the bag is food-safe and oven-safe.

Step-by-Step: How to Make Paper Bag Turkey
Once you’ve gathered all your ingredients and ensured you have a food-safe paper bag ready, follow these straightforward steps to prepare a magnificent paper bag turkey:
- Brine Your Turkey. For truly exceptional flavor and moisture retention, I highly recommend brining your turkey. You can opt for either an easy turkey brine (liquid brine) or a dry turkey brine, which I’ve found to impart even more incredible flavor and texture. Plan for 1-3 days of brining depending on your chosen method and turkey size.
- Prepare and Season. After the turkey has finished brining (ensure it’s thoroughly patted dry if using a wet brine), it’s time to infuse it with rich flavors. Liberally season the entire turkey, both inside and out, with salt, pepper, and your Italian herb blend. Next, take your softened butter and carefully rub it all over the turkey’s surface, making sure to gently lift the skin over the breast to rub a generous amount directly onto the meat. This butter layer is crucial for crispy skin and moist meat. Finally, stuff the turkey cavity with aromatics like chopped celery, onion, and quartered lemon – these will add incredible depth to your drippings and turkey flavor. Remember to double-check that any giblets in plastic bags have been removed from the cavity before stuffing with aromatics.
- Bag and Roast. Carefully slide the prepared turkey into your large parchment or brown paper bag. Once nestled inside, pour the cup of chicken broth directly into the turkey’s cavity. Then, fold the bag securely closed, tucking the edges beneath the turkey so that it creates a sealed environment. This seal is essential for trapping the steam and juices. Place the bagged turkey into a sturdy roasting pan and transfer it to your preheated oven. During the cooking process, resist the urge to open the bag to check on it – this releases the steam, which is vital for keeping the turkey tender, moist, and delicious! If you’re concerned about monitoring the temperature, a remote meat thermometer is an excellent investment.
- Crisp (Optional). If you desire an extra-crispy skin beyond what the butter rub and bag achieve, you can carefully remove the turkey from the bag after it’s fully cooked and place it under a broiler for 5-8 minutes. Watch it very closely to prevent burning.
- Rest. Once the turkey is fully cooked to the correct internal temperature (165°F in the thickest part of the thigh without touching bone), remove it from the oven. Keep it in the sealed bag for a minimum of 20-30 minutes (or even longer, up to an hour) before carving. This resting period is critical; it allows the juices to redistribute throughout the meat, ensuring every slice is incredibly moist and flavorful.
- Carve and Enjoy! After resting, carefully cut the bag open, transfer the turkey to a carving board, and carve it into beautiful slices. Serve immediately and savor the perfectly cooked, juicy, and flavorful results!

Expert Tips and Tricks for a Perfect Paper Bag Turkey
Mastering the paper bag turkey method is incredibly simple, but a few key tips will ensure your bird is the star of any holiday gathering:
- The Science Behind the Bag: The brown paper bag method is ingenious because it acts as a mini-steamer and oven in one. By containing the turkey, the bag traps the evaporating moisture from the bird and the chicken broth. This creates a high-humidity, even-heat environment that effectively self-bastes the turkey, preventing it from drying out while simultaneously helping the skin crisp up thanks to the butter application. This constant, moist heat is the secret to a consistently juicy bird.
- Resist the Urge to Peek! This is perhaps the most crucial rule for a successful paper bag turkey. Opening the bag during cooking releases all that essential steam, compromising the moist environment that keeps your turkey tender. Trust the process! The bag is doing the hard work of basting for you. If you’re a bit anxious about internal temperatures, a remote meat thermometer with a probe that stays in the turkey while it cooks in the oven is a fantastic solution, allowing you to monitor progress without disturbing the bag.
- Achieve Extra Crispy Skin with a Broiler: While the brown bag method, combined with a generous butter rub, will give you beautifully golden and crispy turkey skin, some prefer an even deeper crunch. For this, after your turkey is fully cooked, carefully remove it from the bag and place it on a broiler-safe pan. Pop it under the broiler on high heat for 5-8 minutes. Be extremely vigilant during this step, watching it constantly to prevent burning, as skin can char very quickly. This quick finish will add that extra layer of irresistible crispness.
- The Golden Rule: Rest Your Turkey: Just as important as cooking it correctly is letting your turkey rest once it’s out of the oven. Allow the turkey to rest for at least 20-30 minutes (or even up to an hour for larger birds) before you begin carving. This crucial period allows the internal temperature to equalize and the meat fibers to relax, reabsorbing the delicious juices that have gathered in the center of the bird during cooking. Carving too soon will result in those precious juices running out onto your cutting board, leaving you with a drier turkey.
- Accurate Temperature Check: To ensure your turkey is safely and perfectly cooked, always use a reliable digital meat thermometer. Insert the thermometer into the thickest part of the thigh, making sure not to touch any bone. The ideal internal temperature for cooked turkey is 165°F (74°C). Check both thighs and the thickest part of the breast.
- Don’t Forget the Giblets! Before you begin seasoning and stuffing, always remember to check the turkey’s cavity for the giblet package and the neck. Many turkeys come with these tucked inside, often in a small plastic bag or tied with twine. It’s essential to remove these before cooking to prevent plastic from melting in your oven. While you can cook the giblets and neck separately to enhance your gravy, always ensure any packaging is removed first.

The Importance of Brining Your Turkey
Brining is a step that significantly impacts the juiciness and flavor of your roasted turkey. It works by introducing moisture and seasoning deep into the meat before cooking, preventing it from drying out and ensuring every bite is flavorful.
Dry Brine: The Secret to Enhanced Flavor
Lately, I’ve become absolutely obsessed with dry brining turkey. I genuinely believe it yields superior flavor and texture compared to traditional liquid brines. Dry brining involves rubbing a salt-based mixture directly onto the turkey, allowing it to penetrate the meat and draw out moisture from within, which then gets reabsorbed, resulting in incredibly tender and flavorful meat with exceptionally crispy skin. Homemade Wet Brine: A Classic Approach
If you prefer a classic wet brine, this easy turkey brine recipe is perfect for an entire turkey or even just a turkey breast. It’s simple to whip up and delivers wonderful results. Simply combine the brine ingredients and fully submerge your turkey in a food-safe container, then refrigerate until you’re ready to cook.
Tip: Always discard any leftover turkey brine that has come into contact with raw turkey. It should never be reused.
Turkey Brine Ingredients:
- 1 Cup Kosher Salt: The primary agent in brining. Salt helps to denature muscle proteins, allowing the meat to retain more moisture during cooking, resulting in a significantly juicier and more tender bird. Kosher salt’s larger crystals dissolve well and provide excellent coverage.
- 1/2 Cup Light Brown Sugar: Adds a subtle sweetness that perfectly balances the saltiness of the brine. It also contributes to the beautiful caramelization and golden-brown color of the turkey skin as it roasts.
- 1 Gallon Vegetable Stock: Provides the flavorful liquid base for your wet brine. Using stock instead of plain water infuses the turkey with a savory depth of flavor that plain water cannot achieve, enhancing the overall taste.
- 2 Tablespoons Black Peppercorns: Introduce a mild, aromatic warmth and a hint of complex spice that complements the other brine ingredients.
- 1 1/2 Teaspoons Allspice Berries: Offer a warm, slightly sweet, and aromatic flavor profile, reminiscent of cloves, cinnamon, and nutmeg. This adds a lovely touch of holiday spice to the brining turkey.
- 1 1/2 Teaspoons Rosemary: A robust, fragrant herb known for its pine-like, peppery aroma. Rosemary pairs exceptionally well with poultry, imparting a distinct earthy and woody flavor that is characteristic of festive roasts.
- 2 Teaspoons Savory: This herb provides a unique peppery, slightly minty, and thyme-like flavor. It adds another layer of herbaceous complexity to the brine, harmonizing beautifully with the rosemary and allspice.
- 1 Gallon Ice Cubes: Crucial for quickly cooling down the boiled brine solution before adding the turkey. The ice ensures that the brine reaches a safe, cold temperature, preventing bacterial growth and maintaining food safety throughout the brining process.
How to Make Turkey Brine:
- Boil Ingredients. In a large stockpot, combine all brine ingredients except the ice cubes. Bring the mixture to a rolling boil over medium-high heat, stirring occasionally to dissolve the salt and sugar.
- Cool Completely. Once the brine has reached a boil and the solids are dissolved, remove it from the heat. Allow the brine to cool down completely to room temperature. This step is critical before proceeding.
- Combine and Submerge. Once the brine is cool, add the gallon of ice cubes to it. Place the turkey in a large, food-grade plastic brining bag, a beverage cooler, or a large stockpot with a tight-fitting lid. Pour the cooled brine and ice over the turkey, ensuring the entire bird is fully submerged. Seal the container tightly.
- Keep Cold and Brine. Transfer the container with the turkey and brine to a refrigerator or a very cold spot. Brine the turkey for at least 12 hours, and up to 3 days, depending on its size and your desired intensity of flavor. Throughout the brining period, it is essential to keep the turkey at a safe, cold temperature, adding more ice as needed if not using a refrigerator.
