Ingredients

  • 3 tbsp olive oil, divided
  • 2 lb black beans, dried (if not using an Instant Pot, soak beans to rehydrate the day before making soup)
  • 1 large onion
  • ¼ cup diced garlic
  • 1 diced bell pepper
  • 2 leeks, diced and divided
  • 3 poblano peppers
  • 3 x 12 oz vegetable stock containers
  • 4 x 12 oz cans Ro-Tel diced tomatoes (preferably 2 original, 1 chili, 1 hot)
  • 2 tbsp garlic powder
  • 2 tbsp chili powder
  • 2 tbsp cumin
  • 2 tbsp oregano
  • 2 bay leaves
  • 1 tsp sea salt
  • ¼ tsp fresh cracked black pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. On a baking sheet, lay out poblano peppers with a drizzle of oil.
  3. Bake until skin is blistered and browned (approx. 15-20 minutes).
  4. When done, remove tops and dice.
  5. While poblanos cook, turn Instant Pot to “Sauté” (or use a large stockpot on medium-high heat).
  6. Add 2 tbsp olive oil and heat until shimmery.
  7. Add diced onion, garlic, and one of the diced leeks.
  8. Sauté until lightly browned and softened (approx. 5-7 minutes).
  9. Add 2 containers of vegetable stock and all the Ro-Tel diced tomatoes.
  10. Add dried black beans.
  11. Add garlic powder, chili powder, cumin, oregano, and bay leaves.
  12. Instant Pot Method: If cooking in an Instant Pot, secure the lid, set valve to “Sealing,” and cook on high pressure for 50 minutes. Allow natural release for 15-20 minutes for softer beans, or perform a quick release for firmer beans.
  13. Stovetop Method: If cooking on the stovetop, bring to a boil, then reduce heat to low and simmer for at least 1 hour, or until beans are very soft. (Allow 2-3 hours if using un-soaked dried beans).
  14. Slow Cooker Method: If cooking in a slow cooker, combine all ingredients and cook on low for 6-8 hours or on high for 3-4 hours, until beans are tender.
  15. In a separate large pan over medium-high heat, soften the remaining 1 diced leek and the diced bell pepper with 1 tbsp olive oil. Cook until very soft and lightly browned.
  16. When soup is cooked and beans are very soft, add the sautéed bell pepper and leek, as well as the diced poblano peppers into the soup.
  17. Add the final container of stock, sea salt, and pepper, then mix well and adjust seasoning to taste.
  18. Serve immediately, or portion for lunches or freezing.
