Ingredients
- 2 cups cooked white rice
- 2 lbs chicken thighs
- 2 tbsp Greek Seasoning
- ¼ cup chopped radishes
- ¼ cup chopped tomatoes
- ¼ cup chopped red onion
- ½ cup feta cheese
- 3 tbsp Kalamata olives, pitted
- ¼ cup chopped romaine lettuce
- ¼ cup hummus
- ¼ cup tzatziki sauce
- Optional: pita bread
Instructions
- Season the chicken thighs with Greek seasoning in a bowl or a ziplock bag and leave it at least an hour, ideally overnight, in the fridge for best flavor.
- Preheat the oven to 400ºF (200ºC). Place seasoned chicken thighs on a baking sheet and bake for 20-25 minutes, or until the internal temperature reaches 165ºF (74ºC). Allow the chicken to cool slightly and then chop into bite-sized pieces.
- Wash and finely chop all the fresh vegetables as listed.
- Assemble the bowls by placing cooked rice (or cauliflower rice) at the base. Then, add the chopped chicken and arrange the fresh toppings including radishes, tomatoes, red onion, feta cheese, Kalamata olives, and romaine lettuce.
- Dollop with hummus and drizzle generously with tzatziki sauce. Serve immediately and enjoy your delicious Greek chicken bowls!
