Why Barley Is Your Next Favorite Grain

Barley is a wonderfully versatile and nutritious grain, often overlooked in favor of quinoa or rice. When cooked to perfection, it boasts a delightful, slightly chewy texture and a distinct nutty flavor that makes it an ideal base for hearty salads. Beyond its appealing taste and texture, barley is a powerhouse of nutrition, rich in fiber, vitamins, and minerals. Its high fiber content contributes to satiety, helping you feel fuller for longer, and aids in digestive health, making it an excellent choice for a balanced diet.

There are two primary types of barley available: hulled barley and pearl barley. Both work beautifully in this recipe, but they do have slight differences in cooking time and nutritional profile. Hulled barley is considered a whole grain, as only the outermost inedible hull is removed, leaving the bran and germ intact. This means it retains more fiber and nutrients but consequently requires a longer cooking time, typically 25-30 minutes more than pearl barley. Pearl barley, on the other hand, has been polished to remove both the hull and the bran layer, resulting in a quicker cooking time and a softer texture, though with a slightly reduced fiber content. For this particular Mediterranean Barley Burrata Salad, either variety will yield a delicious result, but adjust your cooking time accordingly.

Essential Ingredients for an Unforgettable Salad

To craft this vibrant and flavorful salad, you’ll need a selection of high-quality ingredients, each playing a crucial role in the overall taste and texture:

  • Barley: As the foundation of our salad, barley offers a hearty, healthy whole grain base that provides sustained energy and a satisfying nutty flavor.
  • Garbanzo Beans (Chickpeas): These legumes are a fantastic addition, boosting the salad’s protein and fiber content. Their buttery, mild flavor and soft texture are delightful, especially when added straight from the can.
  • Microgreens: Elevate the freshness of the salad with microgreens. These delicate baby lettuces, sprouts, and other young vegetables are harvested early, offering a more concentrated flavor and tender texture than their mature counterparts. Choose your favorite, such as peppery arugula microgreens or a vibrant rainbow mix.
  • Cherry Tomatoes: Small, sweet, and bursting with flavor, cherry tomatoes are ideal. Their low water content ensures they won’t make your barley soggy, preserving the salad’s perfect texture. Halving them releases their juices and enhances their natural sweetness.
  • Shallots: Finely diced raw shallots contribute an earthy, refined onion-and-garlic-like flavor with a gentle kick. Shallots are notably milder than onions, offering a less intense heat when served raw, making them perfect for this delicate salad.
  • Fresh Basil: For an aromatic touch, thinly slice fresh basil leaves using the chiffonade technique. To achieve this, stack basil leaves, roll them tightly like a cigar, and then slice them crosswise as thinly as possible. This method creates beautiful, delicate ribbons that distribute their fragrant flavor evenly throughout the salad.
  • Sundried Tomatoes: These intensely flavored tomatoes provide a concentrated burst of sweet and tart notes. Sundried tomatoes offer a richer, deeper flavor profile than fresh tomatoes, adding wonderful complexity and layers to the dish.
  • Marinated Artichoke Hearts: Canned marinated artichoke hearts are a convenient and delicious addition. They are tender, easy to eat, and infused with a light, buttery flavor from their marinade. Opt for those packed in olive oil and herbs, ensuring to drain any excess oil before incorporating them into the barley salad.
  • Crunchy Garlic Nuggets (optional): While not traditionally Mediterranean, these nuggets provide an irresistible crispy, crunchy bite and a rich garlic flavor without adding extra salt. They’re a fantastic textural contrast!
  • Burrata: The crown jewel of this salad. Burrata is a fresh Italian cheese, a delicate mozzarella pouch filled with a creamy, luscious center of stracciatella (shreds of mozzarella and cream). Its mild, fresh flavor and opulent texture make it truly special.
  • Truffle Oil: Olive oil infused with the earthy aroma of black truffles offers a budget-friendly yet potent way to introduce a distinctive, luxurious truffle flavor to your salads and other dishes. Use it sparingly to impart a rich, aromatic depth.

Mastering the Mediterranean Barley Burrata Salad: Tips and FAQs

Creating an exceptional Mediterranean Barley Burrata Salad goes beyond just combining ingredients; it involves attention to detail and a few key techniques to truly elevate the flavors. Here are some expert tips to ensure your salad is nothing short of spectacular:

Select Fresh Ingredients: The foundation of any great salad is its ingredients. Prioritize using the freshest produce available, especially for the tomatoes, as their quality profoundly impacts the dish’s overall taste and texture.

Ripe Tomatoes are Key: Opt for ripe, garden-fresh tomatoes. Varieties like heirloom or vine-ripened tomatoes often boast superior flavor and a more desirable texture, bursting with natural sweetness.

Prep Ingredients in Advance: Efficiency in the kitchen is key. Prepare all your components before you begin assembling the salad. This includes thoroughly washing and drying your microgreens, thinly slicing the garlic, draining and coarsely chopping the artichoke hearts, and gently tearing or breaking the Burrata into more manageable pieces.

Cook Barley to Perfection: The barley should be cooked to an al dente consistency—tender yet retaining a slight chew. Always follow the package instructions for precise cooking times and water ratios. Enhancing the flavor of the barley from the start is simple: add a pinch of salt to the cooking water.

Season the Barley: Once cooked and still warm, immediately season the barley with a generous drizzle of high-quality truffle oil and a dash of salt. The warmth allows the grains to better absorb these wonderful flavors, deepening the salad’s profile.

Use Quality Olive Oil: For drizzling over the finished salad, invest in a high-quality extra virgin olive oil. Its rich, fruity notes will enhance the overall Mediterranean character and add a silky texture.

Layer Flavors Thoughtfully: Assemble your salad by layering ingredients strategically. Begin with the seasoned barley as your base, then gently add the microgreens, followed by the artichokes, tomatoes, and finally, the finely sliced garlic. This methodical layering ensures each ingredient’s taste and texture are distinct and appreciated.

Drizzle Truffle Oil Sparingly: Truffle oil can be quite potent, so exercise caution. Drizzle it lightly over the salad, then taste. It’s always easier to add a little more if needed than to try and mitigate an overpowering truffle flavor.

Burrata Placement: Position the creamy Burrata on top of the salad just before serving. For a stunning presentation, gently break it open to allow its luscious, creamy interior to softly ooze over the other ingredients, creating a beautiful and inviting visual.

Season to Taste: Before serving, take a moment to taste the salad and adjust the seasoning. You might find it needs a touch more salt, a grind of fresh black pepper, or an additional hint of truffle oil to perfectly balance the flavors.

Garnish with Fresh Herbs: A final flourish of fresh herbs, such as additional basil or a sprinkle of chopped parsley, can add a vibrant pop of color and a fresh, aromatic finish to the salad.

Serve Immediately: For the best experience, this salad is truly best enjoyed fresh and immediately after assembly. This preserves the optimal textures of the microgreens and burrata, and ensures the flavors are at their peak.

Pair with a Good Wine: To complement the creamy burrata and the fresh, zesty ingredients, consider pairing this delightful salad with a crisp white wine like a Sauvignon Blanc or a light, refreshing Rosé.

Frequently Asked Questions About Burrata Barley Salad

What is burrata, and where can I find it?

Burrata is a exquisite Italian cheese crafted from fresh mozzarella and cream. You can typically locate it in the specialty cheese section of well-stocked grocery stores, dedicated cheese shops, or authentic Italian markets.

Can I substitute Burrata with another cheese?

While Burrata offers a uniquely creamy and indulgent texture that is difficult to fully replicate, you can substitute it with fresh mozzarella for a similar mild flavor profile, or a creamy cheese like stracciatella. However, be aware that these alternatives will not provide the same rich, flowing creamy interior characteristic of true burrata.

Do I need to rinse the barley?

It is not typically necessary to rinse cooked barley for this particular salad. Once it’s tender, simply drain it thoroughly and allow it to cool slightly before proceeding with seasoning and mixing with other ingredients.

Can I use pearl barley instead of hulled barley?

Absolutely, pearl barley is a suitable substitute for hulled barley in this recipe. Just remember that pearl barley cooks significantly faster because its bran layer has been removed. Be sure to adjust the cooking time according to the specific instructions provided on your pearl barley package to ensure it’s perfectly tender.

What can I substitute for truffle oil if I don’t have it?

If truffle oil is not available, you can still achieve a delicious salad by substituting it with a high-quality extra virgin olive oil. While it won’t have the distinctive truffle aroma, a good olive oil will contribute a lovely richness. Alternatively, consider a touch of garlic-infused olive oil for an aromatic kick. Remember that truffle oil has a very strong flavor, so if you’re using another intensely flavored oil, use it sparingly at first.

Can I prepare this salad in advance?

Many components of this salad can be prepared ahead of time to streamline your cooking process. You can cook the barley, chop the vegetables, and even mix the barley with the artichokes, tomatoes, and microgreens. However, for optimal freshness and texture, it is highly recommended to add the burrata and drizzle the truffle oil just before serving.

How long does this salad last once assembled?

Once fully assembled, this salad is best enjoyed immediately to savor its vibrant flavors and textures. If you happen to have leftovers, store them in an airtight container in the refrigerator. However, please note that the burrata may lose some of its characteristic creamy texture and integrity after being stored.

Can I make this salad dairy-free or vegan?

To adapt this delicious salad for a vegan or dairy-free diet, you can easily substitute the burrata with a high-quality dairy-free cheese alternative. If a suitable alternative isn’t available, simply omit the creamy cheese entirely. Additionally, ensure that you use only olive oil instead of truffle oil (as some truffle oils might have non-vegan ingredients or carriers) and verify that all other ingredients, such as marinated artichoke hearts, are vegan-friendly.

What can I serve alongside this salad?

This versatile salad pairs wonderfully with a variety of main courses. It’s an excellent accompaniment to grilled chicken, pan-seared fish, or roasted vegetables. Its refreshing yet hearty profile makes it suitable for anything from a light lunch to a more substantial dinner plate.

Can I customize the salad with additional ingredients?

Absolutely! This salad is highly customizable to suit your preferences. Feel free to experiment with additions like roasted red peppers for sweetness, toasted pine nuts or chopped pistachios for extra crunch, or a delicate drizzle of balsamic glaze for an added layer of tangy-sweet flavor.

What type of microgreens work best in this salad?

Mild-flavored microgreens are generally the best choice for this salad, as they complement rather than overpower the other delicate ingredients. Varieties such as baby arugula, fresh spinach microgreens, or fragrant basil microgreens work exceptionally well, adding a burst of freshness and a subtle peppery or herbal note.

How do I prevent the garlic from being too overpowering?

To ensure the garlic flavor is present but not overwhelming, try slicing it very thinly or using a garlic press to finely mince it. This helps to distribute the flavor more evenly throughout the salad. Additionally, allowing the salad to rest for a few minutes after adding the garlic can help to mellow its intensity, integrating it more smoothly with the other ingredients.

burrata barley salad in a white bowl with microgreens, artichoke hearts, and tomatoes
This Mediterranean Barley Salad is packed with flavor, is a great way to add some grains into your diet, and is topped with a burrata. This is the salad you’ll want all the time after your first bite. It’s garlicky and truffley and satisfying but won’t slow you down.

Equipment

  • TRUFF Black Truffle Oil – Black Truffle Infused Olive Oil – Gourmet Dressing, Seasoning, Marinade, or Drizzle, Non-GMO, Gluten-Free, 6 fl.oz
  • Organic Garlic Gold Nuggets, Crunchy Roasted Garlic Seasoning Granules, Sodium Free no MSG Free, Vegan Keto Paleo Friendly Food, 2.1 Oz Jar (Pack of 3)
  • Goya Foods Chick Peas, Garbanzo Beans, 29 Ounce (Pack of 12)
  • Kirkland signature artichoke hearts marinated in oil 33 oz

Ingredients

  • 1 lb pearl barley
  • 1 can chickpeas, drained
  • ¼ cup dry thinly sliced sun-dried tomatoes
  • 1 cup microgreens, use a microgreen you love – baby arugula, rainbow microgreens, etc
  • 8 oz burrata cheese, two large burrata balls, or four small burratas
  • 1 cup marinated artichoke hearts, drained
  • 8 oz cherry tomatoes, halved
  • 8-10 leaves basil, thinly sliced (chiffonade)
  • 3 tablespoons black truffle olive oil
  • 1 tablespoon Maldon finishing salt, if using regular salt, reduce to 1 teaspoon, then taste to add more
  • 2 teaspoons fresh cracked pepper
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon crunchy garlic, optional

Instructions

  • In a large pot, bring 6-10 cups of water to a rolling boil (the exact quantity isn’t crucial, just ensure enough to fully submerge the barley).
  • Add the barley to the boiling water and cook until tender. For pearl barley, this typically takes about 10 minutes, but always refer to your package instructions for precise cooking times, especially if using hulled barley.
  • Once the barley is tender and has a slightly chewy texture, drain it thoroughly through a colander. Transfer the drained barley to a large mixing bowl.
  • To the bowl with the barley, add the drained marinated artichoke hearts, halved cherry tomatoes, thinly sliced fresh basil, and fresh microgreens. Gently toss all ingredients together to combine.
  • Drizzle the black truffle olive oil over the salad. Season generously with Maldon finishing salt (or your preferred salt), fresh cracked pepper, and freshly squeezed lemon juice. If using, sprinkle in the crunchy garlic nuggets.
  • Toss all the ingredients thoroughly to ensure the seasonings are evenly distributed. Taste the salad and adjust the seasoning as needed, adding more salt, pepper, or truffle oil to achieve your desired flavor balance.
  • Just before serving, gently place the burrata cheese on top of the salad. For an appealing presentation, you can lightly tear or cut the burrata to allow its creamy interior to peek through. Serve immediately to enjoy the freshest textures and flavors.
