Understanding and Cooking Farro
Farro, an ancient grain cherished for centuries, is a fundamental component of this salad, bringing a delightful chewiness and nutty depth. While it might seem exotic, cooking farro is straightforward, though preparation methods can vary depending on the type you purchase.
Types of Farro and How to Cook Them
There are three main types of farro, each requiring slightly different cooking times:
- Whole Farro: This is the least processed form, retaining all of its bran. It’s the most nutritious but takes the longest to cook, often requiring an overnight soak before boiling for 30-40 minutes.
- Semi-Pearled Farro: A portion of the bran is removed, which significantly reduces cooking time. It usually doesn’t require soaking and can be boiled for 20-30 minutes until tender.
- Pearled Farro: This is the most common type found in American supermarkets. The entire bran has been removed, making it the quickest to cook, typically boiling in just 10-15 minutes until soft yet still al dente.
Given these variations, always refer to the specific cooking instructions provided on your farro packaging. Some brands may suggest soaking, while others are ready to cook directly. The key is to achieve a texture that is pleasantly chewy, not mushy. Once cooked, drain the farro thoroughly to prevent it from becoming waterlogged, then it’s ready to be incorporated into your salad.
For this recipe, we generally recommend pearled or semi-pearled farro for their convenience, but feel free to use whole farro if you prefer its robust texture and have the extra time for preparation. The result will be a wonderfully rich and satisfying base for your burrata salad.
Tips and Variations for the Best Burrata Farro Salad
This Burrata Farro Salad is incredibly adaptable, allowing you to tailor it to your preferences and what you have on hand. Here are some tips and tricks to elevate your salad and answer common questions:
Is Farro Gluten-Free?
It’s crucial to note that farro is an ancient grain that does contain gluten. Therefore, it is NOT suitable for individuals with Celiac disease or those strictly avoiding gluten. However, if gluten is part of your diet, farro is an excellent choice for incorporating more whole grains due to its impressive nutritional profile. It’s rich in plant-based protein and fiber, making it a healthy and filling option to sustain you throughout the day.
Expanding Your Vegetable Palette
While our core recipe features the simple yet perfect combination of shallots, cucumber, tomatoes, and basil, this salad welcomes a variety of other vegetables. Experimenting with additional produce can add new layers of flavor and texture. We often recommend lightly sautéing or roasting certain vegetables to bring out their sweetness and improve their texture, though fresh is also fantastic if you enjoy that crisp bite:
- Roasted asparagus for an earthy, slightly sweet note.
- Sautéed mushrooms, like cremini or shiitake, for umami depth.
- Roasted cauliflower florets, which become tender and caramelized.
- Sweet, rich caramelized onions add a wonderful complexity.
- Sautéed zucchini and summer squash for a delicate, fresh flavor.
- Baby corn, either fresh or lightly grilled, for a subtle crunch.
- Roasted red pepper strips, adding sweetness and a vibrant color.
- Fresh spinach or arugula, gently folded in just before serving for a peppery kick.
- Olives, Kalamata or Castelvetrano, for a briny, Mediterranean touch.
- Avocado, diced and added just before serving for creaminess.
Burrata and Cheese Alternatives
Burrata is undoubtedly the star, offering a luxurious creamy center that beautifully complements the chewy farro and fresh vegetables. If burrata isn’t available or if you prefer a different cheese, here are some excellent substitutes:
- Fresh Mozzarella: While not as creamy as burrata, fresh mozzarella balls (bocconcini or ciliegine) offer a similar mild flavor and soft texture.
- Crumbled Feta: For a tangy, salty contrast, feta cheese is a fantastic option.
- Goat Cheese: Creamy, slightly tart goat cheese crumbles can add a sophisticated twist.
- Ricotta Salata: A firmer, saltier ricotta, perfect for grating or crumbling over the salad.
Dressing and Flavor Enhancements
Our recipe uses olive oil, shallots, garlic, and Italian herbs for a simple yet flavorful dressing. You can further enhance or customize the dressing:
- Lemon-Herb Vinaigrette: Whisk together extra virgin olive oil, fresh lemon juice, a touch of Dijon mustard, salt, pepper, and your favorite herbs like oregano or thyme.
- Balsamic Glaze: A drizzle of balsamic glaze (reduced balsamic vinegar) adds a sweet and tangy dimension.
- Pesto: Stir in a tablespoon or two of fresh pesto for an intensely aromatic and herbaceous flavor.
- Fresh Herbs: Don’t limit yourself to basil. Fresh parsley, dill, or mint can add different layers of brightness.
Making it a Complete Meal
To transform this side salad into a more substantial main course, consider adding cooked protein directly to the mix:
- Grilled or shredded chicken
- Flaked salmon or tuna
- Roasted chickpeas or lentils for a plant-based protein boost
- Hard-boiled or poached eggs
Frequently Asked Questions (FAQs)
This delicious dish can be refrigerated in an airtight container for up to four days. However, for the best flavor and texture, it is recommended to consume it within two days of preparation. The burrata is best added just before serving, or if added earlier, it might blend more into the salad.
Absolutely! This salad is excellent for meal prep. You can cook the farro and chop all the vegetables a day or two in advance. Store the farro and vegetables separately in the refrigerator. Assemble the salad and add the burrata just before serving for optimal freshness and texture.
Burrata is an Italian cow milk cheese (occasionally buffalo milk) made from mozzarella and cream. The outer shell is solid mozzarella, while the inside contains a soft, creamy mixture of stracciatella and cream, giving it an unusual, soft texture. When cut open, the rich, creamy interior spills out, making it a luxurious topping for salads, pizzas, or crusty bread.
While farro’s nutty flavor and chewy texture are unique, you can certainly experiment with other grains. Quinoa, couscous, or pearl barley would all make excellent bases for this salad. Adjust cooking times according to package directions for your chosen grain.
This Burrata Farro Salad is delicious served chilled or at room temperature. Chilling it for at least an hour allows the flavors to meld beautifully. When ready to serve, gently place the burrata ball(s) on top and encourage guests to break it open as they spoon out their portions, allowing the creamy interior to coat the salad.

Ingredients
- 1 lb farro, prepared according to package directions and drained well
- 4 tablespoons olive oil, divided
- 1 large shallot, diced finely
- 4-6 cloves garlic, minced
- 2 teaspoons Italian Herbs
- 8 oz cherry tomatoes, sliced in half
- 1 cucumber, cut into 1″ bites
- 6 leaves fresh basil, chopped
- 1-2 balls fresh burrata
Instructions
- Prepare farro according to package directions. Drain well and place in a large bowl for serving.
- In a small pan, heat 2 tbsp olive oil until shimmering over medium heat.
- Stir in shallots and minced garlic and cook until softened and very lightly browned, about 2-3 minutes, releasing their aromatic flavors.
- Add the sautéed shallots and garlic into the prepared farro, tossing gently to combine.
- Add the sliced cherry tomatoes, cucumber bites, chopped fresh basil, and Italian herbs to the farro mixture. Toss everything together until all ingredients are evenly mixed and coated.
- Chill the salad in the refrigerator for at least 1 hour. (This step is optional, but we find that chilling allows the flavors to fully meld and deepen, enhancing the overall taste and texture of the salad.)
- Just before serving, place the fresh burrata ball(s) on top of the salad. Encourage guests to break open the cheese as they serve themselves, allowing the creamy interior to spread throughout the salad.
- Enjoy this fresh, creamy, and hearty Burrata Farro Salad!
Notes
If you’re not a fan of burrata, or simply don’t have any on hand, you can easily omit it. Alternatively, a wonderful swap is 1 cup of crumbled feta cheese, which offers a delightful tangy and salty contrast to the salad.
