Ingredients
- 1 lb langoustine tails, UNCOOKED
- 2 cups extra sharp cheddar cheese, shredded
- ½ cup half and half
- 4 tbsp salted butter
- 1 cup organic, quick grits
- 3 cups water, or specified amount for 1 cup grits according to your brand’s packaging
- 1 tsp sea salt, plus more to taste
- ¼ tsp ground black pepper
- *optional- ½ cup vermouth, cook grits a touch longer if adding this so it is not too runny
- *optional- paprika and garlic, to taste
Instructions

Bring water to a rolling boil in a medium saucepan. Slowly add the grits, stirring constantly to prevent lumps. Continue to stir frequently until the grits begin to thicken slightly, typically within 2-3 minutes.

Reduce the heat to low. This prevents the grits from sticking and allows them to cook gently.

Stir in the shredded extra sharp cheddar cheese, half and half, and butter. Continue stirring until the cheese is fully melted and incorporated, creating a creamy, luxurious consistency.

Gently fold in the uncooked langoustine tails, along with the sea salt and ground black pepper. Stir carefully to ensure the langoustine cooks evenly throughout the grits. If you’re adding optional vermouth, now is the time to add it, allowing the alcohol to cook off as the langoustine gently poaches in the creamy grits.

Cook for an additional 3-5 minutes, or until the langoustine has just turned opaque and developed a delicate pink hue. It’s crucial not to overcook shellfish, as it can become tough and develop an undesirable “fishy” taste. The moment it changes color from translucent to opaque, it’s ready to be served, ensuring maximum tenderness and flavor. Taste and adjust seasoning with more salt, pepper, or optional paprika and garlic as desired.
