How to Make Maple Pecan Biscotti

To make this recipe, we will need the following ingredients:

  • Butter: The softened butter is used to give the biscotti a rich, buttery flavor.
  • Light brown sugar: The light brown sugar adds sweetness and moisture to the biscotti, helping to give it a tender texture.
  • Maple syrup: The maple syrup brings a sweet and distinctively maple flavor to the biscotti.
  • Eggs: The eggs are used to bind the dough together and add richness to the biscotti.
  • Vanilla extract: The pure vanilla extract adds a warm and comforting flavor to the biscotti.
  • All-purpose flour: The all-purpose flour is the base of the biscotti dough and provides structure to the cookie.
  • Baking powder: The baking powder helps the biscotti to rise and gives them a slightly lighter texture.
  • Pecans: The roughly chopped roasted, salted pecans add a nutty and salty flavor to the biscotti, as well as a crunchy texture.

Once you’ve gathered your ingredients, we will use the following process:

  1. Prep. Preheat the oven to 350F and line a rimmed baking sheet with parchment paper.
  2. Mix. Add the softened butter, light brown sugar, and maple syrup to the bowl of a stand mixer fitted with the paddle attachment. Beat on medium speed until light and fluffy– about 2 minutes. Next add the eggs and vanilla. Mix until well combined– the mixture may look curdled but don’t worry! Add the flour and baking powder. Mix just until no large lumps of flour remain. Add the pecans and gently fold them into the biscotti dough. Transfer the dough to the prepared baking sheet and shape it into a log (10” long, 3” wide, and 1” tall).
  3. Bake. Bake the biscotti for 25-28 minutes, or until the exterior is golden brown.
  4. Slice. Remove the biscotti from the oven and carefully slice the log horizontally into 1” pieces– I recommend a serrated bread knife!
  5. Bake to crisp. Place the biscotti cut side down onto the baking sheet and return the pan to the oven for an additional 15 minutes, or until the biscotti are golden brown.
  6. Cool. Allow the biscotti to cool completely and then transfer them to an airtight container. Store at room temperature for up to 10 days.

Tips and Tricks for Perfect Maple Pecan Biscotti

Toast the pecans: Toasting the pecans before adding them to the dough will intensify their flavor and give them a crunchy texture.

Chill the dough: Chilling the dough before shaping and baking the biscotti will make it easier to handle and help the biscotti hold their shape.

Use a sharp knife: Use a sharp serrated knife to slice the biscotti after the first bake. This will help prevent the biscotti from crumbling or breaking.

Bake twice: Biscotti are baked twice to give them their signature crispy texture. After the first bake, slice the biscotti and then bake them again on a lower temperature until they are crisp and dry.

Store properly: Store the biscotti in an airtight container at room temperature for up to a month. This will help them stay fresh and crispy.

Customize the recipe: Feel free to experiment with different nuts, such as almonds or walnuts, or swap out the maple syrup for honey or another sweetener.

Dip in chocolate: For an extra special treat, dip the cooled biscotti in melted chocolate and allow it to harden before serving.
