  • Lee Kum Kee Hoisin Sauce
  • USA Pan Bakeware Half Sheet Pan
  • Vitamix E310 Explorian Blender

Ingredients

  • 2 tbsp grapeseed oil
  • 1 bell pepper, any color, diced
  • 1 eggplant, skin on, diced
  • 1 zucchini, diced
  • ½ cup walnuts, diced very fine

Instructions

  1. Set a baking sheet out with parchment paper and preheat oven to 350 degrees Fahrenheit.
  2. In a large pan, heat grapeseed oil until it shimmers, indicating it’s ready for cooking.
  3. Add in the diced bell pepper, eggplant, walnuts, and zucchini to the heated pan.
  4. Sauté the vegetables and walnuts until they are nicely browned, which should take approximately 15 minutes. Stir regularly to ensure even cooking and prevent any burning.
  5. Remove the pan from heat and allow the mixture to cool for about 5 minutes. This step is crucial before blending.

  12. At this point, your baked meatballs can be removed from the oven and frozen for future use. Allow them to cool completely before freezing in an airtight container or freezer bag.
  13. If you plan to eat them immediately, place the baked meatballs in a pan with a drizzle of grapeseed oil over medium heat.
  14. Brown the meatballs on all sides for about 8 minutes, which will add extra crispiness and flavor.
  15. Add your hoisin sauce to the pan, stirring well to coat all the meatballs evenly.
  16. Allow the sauce to heat through and thicken slightly for about 2 minutes, ensuring the meatballs are fully glazed.
