Grilled Paneer and Vegetable Skewers
Delicious vegetarian paneer tikka vegetable skewers are a taste of India off the grill! Perfect for an easy, flavorful meal.

Ingredients 

  • 16 oz paneer, cubed into 1-2 inch cubes, about 15-16 cubes
  • ½ green bell pepper, cut into chunks
  • ½ red bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • cooking spray

For the marinade:

  • ¾ cup whole milk yogurt
  • ½ tsp turmeric powder
  • 1 tsp garam masala
  • ½ tsp cumin powder
  • ½ tsp coriander powder
  • ¼ tsp crushed ginger
  • ¼ tsp crushed garlic
  • ½ tsp cayenne, skip or reduce quantity to reduce heat
  • salt, to taste
  • For garnish, optional
  • minced cilantro
  • lime
  • chaat masala

Instructions 

  • In a large bowl, thoroughly mix all the ingredients designated for the marinade until well combined.
  • Add the cubed paneer, onions, and bell peppers to the bowl. Toss everything gently to ensure all pieces are evenly coated with the rich marinade.
  • Cover the bowl and refrigerate for at least 20 minutes to allow the flavors to meld. For a more intense flavor, you can marinate for 2-4 hours, or even overnight.
  • Preheat your grill or grill pan to medium-high heat. Carefully thread the marinated paneer and vegetables onto skewers, alternating between paneer cubes, onion chunks, and bell pepper pieces.
  • Lightly spray your non-stick grill pan or grill grates with cooking spray to prevent sticking. Place the skewers on the preheated surface.
  • Grill the skewers, turning them every 5-10 minutes, until all sides are nicely charred and the paneer and vegetables are cooked through. The marinade should appear dry and cooked onto the skewers.
