  • 1 onion, diced fine
  • ¼ cup garlic, diced
  • 1 cup chicken stock
  • 8 oz neufchatel cheese
  • ½ cup heavy cream or half and half

  3. Add zucchini and stock to pan and toss evenly, bringing to a rapid boil.
