How to Prepare Your Turkey Pot Pie
Creating this delicious turkey pot pie is a straightforward process, designed to deliver maximum flavor with minimal effort, especially after the busy holiday season. Follow these simple steps for a perfect, hearty family dinner.

- Prepare Your Baking Dish: Begin by preheating your oven to 375°F (190°C). Lightly spray a 9×13 inch baking dish with cooking spray and set it aside. This prepares your vessel for the delicious pot pie filling.
- Sauté Aromatics: In a large skillet, melt the butter over medium heat. Add the diced onions and cook, stirring occasionally, until they become soft and translucent, which should take about 5-8 minutes. Next, add the minced garlic, stirring continuously for about 30 seconds until it becomes fragrant. Be careful not to let the garlic brown.
- Add Vegetables and Liquids: Stir in the frozen mixed vegetables and continue to cook for about 10 minutes, stirring occasionally, until they are heated through. Pour in the half and half and cream of chicken soup, whisking thoroughly until the mixture is smooth and well combined.
- Incorporate Turkey and Season: Gently fold in the cooked, diced or shredded turkey and the pepper. Stir until all the turkey is evenly coated in the rich, creamy sauce. Heat the mixture until it just begins to bubble around the edges. Taste and adjust seasoning with salt and additional pepper if desired.
- Assemble the Filling: Carefully pour the hot turkey and vegetable mixture into your prepared 9×13 inch baking dish, spreading it evenly across the bottom.

- Prepare the Biscuit Dough: In a large mixing bowl, combine the all-purpose flour, baking powder, granulated sugar, fine sea salt, and baking soda. Whisk these dry ingredients together thoroughly. Add the very cold unsalted butter (grated or small diced) to the bowl. Use a pastry cutter, two forks, or your fingertips to cut the butter into the dry ingredients until the mixture resembles coarse sand with pea-sized pieces of butter throughout.
- Form the Dough: Pour in ¾ cup of the buttermilk and stir until just combined. Don’t worry if there are a few pockets of loose flour at the bottom; overmixing can make biscuits tough.

- Roll and Cut Biscuits: Turn the biscuit mixture out onto a lightly floured work surface. Knead the dough a few times, just enough until it comes together to form a cohesive ball. Roll out the dough into a rectangle approximately ½ inch thick. Using a knife or a biscuit cutter, cut the dough into 8 even pieces.
- Top and Bake: Arrange the cut biscuit pieces directly on top of the turkey pot pie filling in the baking dish. Brush the tops of the biscuits with the remaining tablespoon of buttermilk.
- Bake to Perfection: Transfer the baking dish to the preheated oven and bake for 20-25 minutes, or until the filling is bubbly and the biscuits are beautifully golden brown on top and bottom. If the biscuits need a little extra browning, you can place the dish under the broiler on high for a minute or two, watching carefully to prevent burning.

- 1 small onion, small diced
- 2 cloves garlic, minced
- 3 cups frozen mixed veggies
- 2 & 1/2 cups half and half
- 2 10.5 ounce cans cream of chicken soup
- 4 cups cooked turkey, diced or shredded
- ½ teaspoon pepper
- salt to taste
- Fresh chopped parsley for garnish, optional
For the Biscuit Topping:
- 2 cups all-purpose flour
- 1 & 1/2 tablespoons baking powder
- 2 teaspoons granulated sugar
- ½ teaspoon fine sea salt
- ¼ teaspoon baking soda
- 8 tablespoons very cold unsalted butter, grated or small diced
- ¾ cup + 1 tablespoon buttermilk, divided
Instructions
- Preheat your oven to 375°F (190°C). Prepare a 9×13 inch baking dish by lightly spraying it with cooking spray and setting it aside.
- In a large skillet, melt 4 tablespoons of butter over medium heat until it is fully liquid and shimmering.
- Add the small diced onions to the melted butter. Cook, stirring occasionally, for 5-8 minutes until the onions soften and become translucent.
- Stir in the minced garlic. Cook constantly for 30 seconds until the garlic is fragrant, being careful not to let it burn.
- Add the frozen mixed vegetables to the pan. Cook, stirring occasionally, for about 10 minutes until the vegetables are heated through.
- Pour in the half and half and cream of chicken soup. Whisk thoroughly until the mixture is smoothly combined and free of lumps.
- Stir in the cooked turkey and ½ teaspoon of pepper. Continue to heat the mixture until it just begins to bubble. Taste and adjust seasoning with salt and additional pepper as needed, then pour this rich filling into your prepared baking dish.
- For the biscuit topping, combine the all-purpose flour, baking powder, granulated sugar, fine sea salt, and baking soda in a large bowl.
- Add the 8 tablespoons of very cold unsalted butter (grated or small diced) to the dry ingredients. Use a pastry cutter, two forks, or your fingers to cut the butter into the flour mixture until it resembles coarse sand with small, pea-sized bits of butter remaining.
- Add ¾ cup of the buttermilk to the flour and butter mixture. Stir gently until just combined; a little loose flour at the bottom is acceptable. Avoid overmixing to keep the biscuits tender.
- Turn the biscuit dough out onto a lightly floured work surface. Knead it a few times until it forms a coherent dough.
- Roll out the dough into a rectangle about ½ inch thick. Cut the dough into 8 even pieces, either squares or rectangles, for your biscuit topping.
- Carefully place the cut biscuit pieces directly on top of the pot pie filling in the baking dish, arranging them to cover the surface.
- Brush the tops of the biscuits evenly with the remaining 1 tablespoon of buttermilk. This will help them achieve a beautiful golden crust.
- Bake the pot pie in the preheated oven for 20-25 minutes, or until the filling is hot and bubbling, and the biscuits are golden brown.
- If the biscuits are not as browned as you prefer after baking, you can briefly place the dish under the broiler on high heat. Watch constantly and closely to prevent burning, removing when the desired golden-brown color is achieved.
